Southwest Sausage Lasagna

I don't think it was too much quicker to make, but it tasted great! I added roast butternut squash to sausage with chestnut mushrooms and onion.

Sausage Spanish Rice

I omitted the celery and used mushrooms instead. I used a lot more spice at the beginning- chili powder, paprika, turmeric and used basil/oregano mix to flavor the tomato sauce. Chicken stock instead of water. This is a versatile recipe which will use lots of veg well, with great flavor. And great served with sour cream!

Coconut Rice

I'd read a number of recipes for coconut rice before I tried it. I let the rice sit in cold water for 15mins before rinsing. I added coconut milk, water and chopped kaffir lime leaves. It was great with a Thai yellow curry.

Pasta with Roasted Butternut Squash and Sage

I gave this 4 stars as I didn't quite use the recipe, more 'inspired by' this recipe. I roasted the butternut squash with a little olive oil and black pepper, and also roasted chicken breasts (with glaze of olive oil, soy sauce, maple syrup and French mustard). Then, I sauted shallots in butter, added butternut squash, chicken and peas, before adding single cream, 2 tablespoons of parmesan and some chopped parsley. Finally added the cooked pasta to the pan, and served with garlic butter.

Almond Rice Pilaf

Nice basic recipe.. I used italian herbs, garlic powder,mushrooms, peas and toasted pecans to flavor it. Nice, but quite mild. I think next time I'll either serve with a good sauce, or use different spices

Maple-Glazed Sausages

I LOVE maple-glazed sausages! I cook the sausages on a foil-lined tray for about 15 mins in oven at 200C (with just a little olive oil), then add either maple syrup with cinnamon/ brown sugar or with sesame seeds to coat, return to oven for about 5 mins.

I used this as base for Maple Bacon Pancake - far better than baking mix suggested. Will probably work to amalgamate the two recipes even more!

Maple Bacon Pancake

5 star taste! I didn't want to use baking mix but used base of sausage and pancake casserole. I did use the cookie sheet, had scaled down to 2 servings and it cooked in less than 20 (+ 5) minutes. Great recipe, one to keep!
