Tex-Mex Turkey Soup

Don't forget to add chili powder! (& Cayenne!) Delicious. Also recommend some fresh lemon juice dripped into each bowl upon serving. :)

Slow Cooker Cornish Hens

I changed all the ingredients... but great idea! I used a little vegetable broth and water in the bottom and added Italian seasoning, parsnips & dry lentils. Also put dry rice, right into the mix! (Just be sure to add the same amt of water to it as if you were cooking rice on the stove.)

Spinach Stuffed Portobello Mushrooms

Great base recipe... I changed all the ingredients. Used feta cheese & rice combined with ground venison in a "mediteranian salsa" from WholeFoods. (Fresh parsley, lemon juice, kalamata olives, sundried tomatoes & Feta) I also made little aluminum foil "rings" as a base to set the mushrooms onto. (This keeps them from getting as soggy in the pan. It elevated them from sitting in the juices.) And I brushed them with garlic butter instead of dressing.

Peanut Noodles

Yum!! Use brewed green tea instead of plain water. I doubled the ginger and halved the soy sauce, based on other reviews. Udon noodles are the best with this! It's especially good chilled, with sliced cucumbers & cilantro added.

Salsa Red Beans N Rice

My secret ingredient for this recipe is a dash of cumin & a dash of saigon cinnamon just as the oil is warming. Add the garlic when the cinnamon has a warm aroma. Thanks for putting your base recipe in a quick, easy to read format! This could be adapted with any favorite bean! My favorite is a Tri-Bean Blend of dark red kidney, pinto, and black beans.

Easy Meatloaf

The Sauce alone Gets 5 stars! I would not have tried those 3 basic ingredients without this recipe! But i prefer more spices in the meat. Add a little worchestershire sauce & garlic powder, and you've got some goodness. I prefer using ground turkey & a dash of EVOO. Parsley and a few crumbled 7-grain crackers never hurt anyone, either!

Pizza Casserole

Excellent! The egg noodles let the flavors meld perfectly. Add any pizza toppings you like, and you have a delicious meal! I used crimini mushrooms, yellow onion, bell peppers, 3 cloves garlic, 1/2 pound italian sausage, and 1/2 cup pepperoni. For a classy texture, cut the pepperoni slices in strips the width of the noodles. I accidentally left out the milk and put the cheese on top at beginning. I only baked it for 25 minutes total, and it came out great!

Ham and Bean Soup

Good base recipe. I added a splash of white wine to onions a minute before broth. I'd simmer with ham for longer, and add beans closer to the end. Extra spices I added: 1 tsp of thyme, tarragon, veggie bouillon, & a pinch of dijon mustard.

Fresh Cranberry Spiced Tea

I recommend making this a few days ahead, & let it sit in the fridge. It's easy to reheat when you want a mug. i didn't even strain it first, left all the cranberries & spices floating in the mix. the flavors meld wonderfully! a winter holiday treat!

Chicken Soup With Pasta and White Beans

if you want added spicyness, use a can of diced tomatoes with green chillies. the white beans & broth compliment this nicely i used italian spices, and a pince of turmeric & garam masala insttead of rosemary. I also used tortelini instead of small pasta. delicious!

Slow Cooker Chicken and Dumplings

Excellent winter meal! There's no need to add any veggies, at all. I halved the recipe, used broth instead of water, and added a splash of marsala cooking wine & two whole garlic cloves for extra flavor. The chicken flavor soaks right into the dumplings. Per other reviews, I cut the biscuits into fourths before I added them, and they were perfectly done, after a half hour.

Rotini and Salami Casserole

Veggie-Bean Brunch Casserole

Good Good Good! And so versatile, i can make it with any fresh ingredients in my fridge! I like using half lima beans and half pinto beans, -These two give a great color & texture mix. You can also try using mushrooms, spinach, and tarragon, instead of green peppers & parsley. I recommend caramelizing the onions, with some of the cumin & chopped garlic. & you can beat the eggs, if you want the consistency more even.
