Chicken Tortilla Soup V

Super easy! Delicious! Followed the recipe exactly. There was only 1 time I made a change. I didn't have enough broth, so I made up the difference with chicken bouillon. It tasted just as good.

Cilantro Chicken Burgers with Avocado

This was my first time cooking ground chicken. After I added all of my ingredients together it wouldn't hold together. Then I added egg and bread crumbs to help it hold together and it became VERY sticky. MY husband didn't attempt to grill them b/c he figured they would fall through the grill. I panfried them (4 min on one side was too long). 4 min on one side and 3 on the other. I was the only one who liked them. I think if you put a little salsa on the bun it would be even better. But, really? What did I do wrong?

Shredded Beef for Tacos

Used a chuck roast & it shredded beautifully. I was afraid of the mexican hot tomato sauce. I am a wimp when it comes to spicy hot. So, I used fire roasted diced tomatoes and green chilis. I also thought 8 tablespoons of garlic was too much, so I used half. Although it was delicious, we ended up adding some tabasco sauce for an itty bitty kick and next time I will use more garlic. Everyone liked it.

Mouth-Watering Stuffed Mushrooms

Green Chili Eggs

We LOVE this! I make it on the weekends and my daughter took the recipe to college with her. I have made it with both fat-free and regular cheese and there is no taste difference. When my daughter was in town I just used 1 can of green chilies. Now that she is gone it will be back up to 2 cans.

Quick and Easy Sauteed Spinach

Way too salty! Sprinkle a little salt and some garlic powder. Also, 10 oz of spinach looks big in the pan, but after cooking, there is no way it could serve 4 people. With less salt, I will try again.

Spicy Avocado Chicken

We will make this again. My husband wants to top it with cheese next time and melt it under the broiler before serving. Had a nice kick. A tad spicy for me, but husband was ok with it. I might cut the red onion or increase the avacado next time and add some garlic or Italian seasoning. But all in all a good recipe. I rate it 3.5 stars.

Pork Tenderloin alla Napoli

I am not sure what happened. The flavor was very good except it was too salty! I followed the recipe as written. I used 1/2 t of salt. My husband & I enjoyed it, but I won't make it again until I can figure out what made it so salty

Baked Garlic Parmesan Chicken

The chicken was so moist and it smelled great cooking. I like the idea of dipping the chicken in the olive oil & garlic rather than egg. The next time I make it, I'm going to add marinara sauce and cheese. A keeper

Amazing Pork Tenderloin in the Slow Cooker

I did not put the tenderloin in the crockpot. I planted the minced garlic into the tenderloin and placed sliced onion rings on the top of it. I put the wine (shiraz), 1 c. beef boullion, 1 Tbs of soy sauce and 1 Tbs Worchestire. I cooked it @ 425 for 45 min, in tented foil, basted it with the sauce, left the foil off for the last 15 min. Basted it again. Poured the juices & drippings into a saucepan, added a TBS cornstarch to thicken it. The tenderloin was great but we pitched the gravy. TOO salty. I should have cut the boullion in half. Smelled great. Hubby loved the meat not the sauce.

This was very good. I wanted to use it @ a party I was attending and I made some last night. I loved it, and husband said he would love it w/o the green peppers. He put some salsa on his and said it was good, too. I am making it for the party

Goat Cheese and Spinach Turkey Burgers

This was really good. I used feta cheese instead of goat cheese, however, I think it would be just as good. Don't leave themin the broiler too long or it will dry those puppies out.
