Pita Chips
This was a FABULOUS recipe ! And easy to boot. I did take the suggestions of a couple of the reviewers and split the pita to get a thinner 'chip' and another reviewers suggestion to use olive oil cooking spray then sprinkle on the herbs and salt. I ran out of garlic salt (discovering it 3 minutes after coming home from getting the pita bread) so improvised and made my own with garlic powder and grey sea salt, 25% salt 75% garlic powder. No chervil ? Another clever reviewer said to use 1/2 parsley 1/2 tarragon !! I'll never buy the greasy bagged pita chips again, not to mention I used whole wheat pita, so my 'is-it-good-for-you' meter was in the 'YES-it-is zone'. Thank you so much for posting this Dawn !

Tomatillo Salsa Verde
WONDERFUL !! Best I have ever made. I did take the advice of Nina L (under most helpful reviews ) by switching the cook then blend to her vice-versa method, I was able to eliminate almost all the water. This is my go-to recipe for company and every time I decide to cook Mexican ! Thanks for sharing Kimberly !

Real Homemade Tamales
Fabulous, and easy to follow. It is definitely labor intensive, but several dozen tamales later, my freezer is stocked and a good dinner was had by all. The only suggestion would be to check the water you do the chiles in, and if it's bitter (mine was) use fresh water for blending the dried chiles. I also followed a readers suggestion and used a pork butt instead of a loin, much more tender and flavorful. Thanks for taking the time to post this !!
