Amish Slaw

First I would like to say that I have made this three times... The first exactly as called for, including leaving it in the fridge overnight and it IS wonderful. I made changes, but only because of MY personal preferences. I make the dressing as is (I used peanut oil), but instead of putting it on the salad I use it more like a salad dressing. I divvy up my prepackaged cabbage mix into 3's that way I can enjoy it for many days and I put the dressing on an hour before I eat it since I REALLY don't like it "soggy". Then I add extra purple cabbage and use red onion. I definitely recommend trying this recipe if your in the mood for a fantastic slaw especially one without mayo.

Alfredo Mostaccioli

I made this for the first time last night and I only changed one thing. I doubled the recipe because I have a larger family, but I didn't add as much parsley as was called for. Only because I didn't have more. Still came out yummy. The entire thing was SUPER delicious. Reviews have stated that it's too salty and I think the problem is with the butter they're using. You have to use UN-salted butter... My only advice is watch what butter you buy and don't feel like you have to "add" anything because it's good all by itself. Great for the novice cook that wants to make a quick meal and not have to worry about anything.

Suki's Spinach and Feta Pasta

It's perfect just the way it is. Abosultey delicious and so super easy to make it's ridiculous. My 3 kids even liked it though the hot pepper was a bit too much for them. Though it's my fault because I added more and a little went a long way. :) One of my favorite recipes because of it's full flavor and cook quick time.

Pizza Pasta

I love this recipe. It's extremely tasty and exceptionally easy... Not to mention all the ingredients are in most peoples cabinets. This recipe is also great for adding your own "flavor" and I guarantee it'll still come out great. The only thing I did different was add hot Italian sausage because I didn't have the pepperoni on hand. It came out delicious and I plan on making it this way from now on. You'll have to use extra sauce because one can is NOT going to be enough. It's one of those recipes that will go into rotation at least a couple times a month.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

I've made this recipe twice and both times it came out great. I followed the recipe to a T the first time and it was wonderful. The Second time around I added a little hot pepper to spice things up, I didn't bother skinning my tomatoes, added an extra can of diced tomatoes, and it came out just as good. This is the kind of recipe that you always keep on hand for those nights when you don't feel like cooking too much. I paired it with a strawberry and spinach salad and my family loved it.

Gumbo Style Chicken Creole

I followed the recipe almost to a "T" and it came out wonderfully. I'm a novice cook at best and I've never cooked Thai before so I was nervous. However it came out amazing and my husband loved it as well. The only thing I did differently was follow someone else's advice and cooked the curry paste in some oil and then added the chicken. I let that simmer for 5-10 minutes and finally added the coconut milk. FYI two cans of coconut milk was WAY more then I needed. :)

Fast Rice Pudding

I had a craving for rice pudding but didn't have the time to do it the "old-fashioned" way, so this recipe came in handy. I wasn't going for the best tasting rice pudding ever, more for a quick, easy, close to tasting perfect type. :) I made a few changes to the recipe. Instead of using evaporated milk which grosses me out, I replaced it with 1 1/2 cups coconut milk, and 1/2 cup regular milk. I only added 1/4 c of sugar so it didn't over power the hint of coconut. I added two eggs and a tsp of real vanilla extract. All in all it came out perfectly and it's a great way to get rid of left over rice.
