Spiced Quinoa
This is an excellent recipe! I changed it up a bit and used red quinoa, almonds slivers instead of pine nuts and left out the raisins. It was delicious. I served it as a side dish to cheese & broccoli stuffed chicken breasts and steamed broccoli. However, with all the protein in the quinoa and chick peas, and its full flavor, it can definitely stand as a main dish as well.

Easy Grilled Chicken Teriyaki
This grilled chicken lives up to its title as easy. I just tossed everything in a bag and let it sit in the fridge. I didn't let it marinate for 24 hours but 6 hours seemed to give it enough flavor. I'll try it overnight next time...(i just usually forget to prepare things that far ahead of time.) Anyway...very tasty recipe! The chicken stayed pretty juicy for being grilled. I had some leftovers for lunch the next day and it was even better. Will definitely make this again!

Coconut-Lime Chicken with Grilled Pineapple
I really liked this recipe. It had a very unique flavor but very tasty. My husband even liked it and he never likes anything out of the ordinary. I replaced the tequila with riesling wine and used stevia in stead of the brown sugar. I also bought a whole coconut and used the milk in that for the sauce, and also added some shredded coconut to the sauce. yum! I served with rosemary garlic couscous and some steamed zucchini & yellow squash. It was delish!
