Garden Chicken Stir Fry

I'll give it 5 stars with additions. this is something I make all the time and serve over Jasmine rice. The easiest way to season is with a tablspoon or 2 of soy sauce at the end. I like to add garlic and fresh ginger with the oil at the beginning. If you like it hot, add a diced thai chili. The other way is to take 1 cup chicken broth with 1-2 T of soy sauce and add it to the pan when everything is cooked. Simmer. 2 tsp cornstarch mixed with a little water stirred in to thicken gives it a better consistency. It's fast, light, healthy, and delicious, just play with asian spices to give it all the flavor you want.

Spinach Pesto Chicken Breasts

Easy, delicious and fast. I was really tired when I searched for something to make for dinner. This recipe looked simple and I had the ingredients. Well, this is the 2nd time I've made it this week. It's a keeper. I basically made as written the first time and the 2nd time I added chopped garlic and then at the end, a bit of feta cheese on top. Both times I served it with jasmine rice. The next time I make it I will add pine nuts. It works well as written but also is fun to add variations. This is a great weeknight meal but I will serve this for company. One of my favorite recipes on this site.

Chef John's Homemade Chicken Noodle Soup

This is the chicken soup recipe I have been looking for. I wanted to make a homemade soup because I felt I was coming down with a bug. I made this one basically as it is laid out though I added more salt, pepper and cayenne pepper for flavor as well as more thyme and a sprig of rosemary. It is simple but the cayenne pepper gives it a wonderful flavor.

Artichoke Tetrazzini

I had the ingredients and this sounded good. I halved the chicken broth and half-and-half as I was just making a small dinner for my husband and me, used more thyme and added a bit of nutmeg and a shake of red pepper flakes. I did not use the canned artichoke liquid in the sauce because it was already tasting PERFECT. This just hit the spot tonight and, coincidentally, was one of the best sauces I have made in years. Thanks for the recipe. It is now in a place of honor in my new 'regular rotation".

Dessert Crepes

Thanks for posting this. It made me want to get up and make some crepes though I haven't made them in many years. I loved the light, fluffy texture. After making them, I melted butter, added cinnamon, sugar and brown sugar. Once melted and bubbly, I added sliced bananas and cooked until they were warm. Several scoops go in the crepes, fold over and spoon some on the top with a sprinkle of powder sugar. If I had walnuts and whipped cream, I would have used them. I surprised my husband of 8 years with them after dinner. He wanted to know why I had been holding out on him and that I need to make these tomorrow night and the next and the next. :)

Baked Lemon Chicken with Mushroom Sauce

I wanted to make this as I haven't had lemon chicken in years. First I marinated the chicken in lemon juice and olive oil. Then I browned the chicken breasts in a skillet before baking them. I used the juice of two lemons...I thought it was too lemony and tart for just 2 pieces of chicken but my husband loved it and said, "Make it again exactly the same!" I put egg noodles on the plate, chicken breast on top and then spooned the mushroom sauce over it. It was a good chicken recipe and gave us something different to do with chicken. Thank you!

Mexican Chicken II

After a crazy day at work, I needed something quick, easy and yummy. I made it in very fast and made some changes based on what I had. I added a can of chili beans, used 1 chicken breast, omitted mushroom soup, used 1/4 c onion and used monterey jack cheese. It was the comfort food I needed and my husband really liked it. It's going to be something I keep items in the house for because it is a great weeknight meal. I should have sauteed the chicken with some peppers to lessen the baking time. Guacamole on top would give it some freshness, too.

Cheese and Bacon Potato Rounds

I was reviewing recipes while hungry and this looked delicious. I sliced one potato, fried it in butter and garlic powder for about 2 minutes, stuck it in the oven on a cookie sheet I sprayed w/ cooking spray and when done, added sour cream, bacon and cheddar cheese. Since I had a jar of caviar from another recipe, I added a bit to half of the rounds. Back in the oven to melt the cheese and it was just great. The caviar topped rounds were preferred. When I make these again, I will use a bit less sour cream. This is very filling so I wouldn't make a lot if you are used to light eating. I loved how easy it was, and it was very satisfying, because nothing beats bacon!

Spanish Rice

I have only tried Spanish Rice once before and it did not work. So, looking for a better way, I saw this recipe and thought I'd try again. The changes I made, seeing other reviews, were to use long grain rice & sauteing the vegetables in butter. I omitted celery as I don;t like it cooked. I seasoned with salt and pepper as well as a little cayenne pepper and a dash of cumin. Also a bit of fresh chopped cilantro at the end. My husband and I both commented on it at the same time and throughout the meal that we really liked it. It is a simple and delicious alternative to just plain old rice.
