Artichoke Tetrazzini
I had the ingredients and this sounded good. I halved the chicken broth and half-and-half as I was just making a small dinner for my husband and me, used more thyme and added a bit of nutmeg and a shake of red pepper flakes. I did not use the canned artichoke liquid in the sauce because it was already tasting PERFECT. This just hit the spot tonight and, coincidentally, was one of the best sauces I have made in years. Thanks for the recipe. It is now in a place of honor in my new 'regular rotation".

Spinach Pesto Chicken Breasts
Easy, delicious and fast. I was really tired when I searched for something to make for dinner. This recipe looked simple and I had the ingredients. Well, this is the 2nd time I've made it this week. It's a keeper. I basically made as written the first time and the 2nd time I added chopped garlic and then at the end, a bit of feta cheese on top. Both times I served it with jasmine rice. The next time I make it I will add pine nuts. It works well as written but also is fun to add variations. This is a great weeknight meal but I will serve this for company. One of my favorite recipes on this site.

Baked Lemon Chicken with Mushroom Sauce
I wanted to make this as I haven't had lemon chicken in years. First I marinated the chicken in lemon juice and olive oil. Then I browned the chicken breasts in a skillet before baking them. I used the juice of two lemons...I thought it was too lemony and tart for just 2 pieces of chicken but my husband loved it and said, "Make it again exactly the same!" I put egg noodles on the plate, chicken breast on top and then spooned the mushroom sauce over it. It was a good chicken recipe and gave us something different to do with chicken. Thank you!
