Quick and Easy Guacamole

I'm a guacamole minimalist. Just avocado and lime juice. This is really good, though. Just leave out the salt and add a bit of Mrs. Dash, if you must.

Blackened Seasoning Mix

HURRAY!! At last! A recipe I cannot improve on. Perfecto for blackening anything from tofu to asparagus. I don't eat meat, but a friend made blackened hamburgers and assures me it's the best. Not pricy and NO SALT.

Mushroom and Onion Vegetarian Tacos

Meh. Using mushrooms as a taco "meat" is a really good idea. It's a good idea, but the seasoning was way too salty. I might make this again, using my own salt-free taco seasoning. I made my own whole wheat tortillas.

Grilled Vegetable Salad

The veggies are wonderful on their own. I served them without the dressing and with balsamic vinegar as a dipping sauce. They were a huge hit! I think next time, I will half some cherry tomatoes and grill them along with a few julienne strips of jalapenos. Salt is completely unnecessary to me.

Spicy Potato Wedges

I usually don't rate recipes that I've tweeked much, but since this is given as a tweekable recipe, I am. I used a pizza seasoning mixture from Winco, cooked for 8 minutes in my microwave, sprinkled on the parmesan and then 3 minutes under my broiler in my convection oven. Absolute perfection!

Slow Cooker Beef Vegetable Soup

I keep a supply of canned foods, mostly low or no added sodium, on hand as an emergency food supply. They do need to be rotated, so occasionally, I need to make dishes using canned veggies. This is a pretty good way to use some of them. Since I am a vegetarian, of course, I didn't add the beef, but instead used a very rich, brown veggie stock. My lower rating is for a lack of flavour. Adding a few herbs and spices would really perk this up a lot. Still it's a good basic recipe for tweakers.

Caesar Vinaigrette

This is really tasty. When I make salad dressing, I always leave out the oil. When ready to serve, I toss the salad with oil to coat, then add the dressing. This works a lot better because the dressing never gets overly oily. Also I left out the salt because Parmesan cheese is very salty.

Sue's Taco Salad

I probably shouldn't try to rate this because I made a three major changes. I give it the full five stars because I'm sure the original is just as delicious. First, I am a vegetarian and used Morningstar Farms Mealstarter hamburger. Then, instead of commercial taco seasoning, I used my own homemade mixture. I do not like either the chemicals or the amount of salt in the commercial preparations. I used a homemade tomato salsa mixed into yogurt for the dressing to painlessly cut down on fat and calories. This version was a huge hit with family and friends. Highly recommended.

Marzetti® Ultimate Roasted Potatoes and Onions

I used regular sized potatoes cut into french fry-sized pieces and roasted a bit longer, as suggested by others. Also, I used my homemade blue cheese dressing (blue cheese crumbles, yoghurt, seasonings). They were altogether wonderful. I gave four stars instead of 5 because I dislike using processed food, as called for in the recipe.
