Good Old Fashioned Pancakes

Great recipe! I ended up using sunflower-seed oil instead of butter because I (like one of the other reviewers) am lazy. Because the oil isn't salted like butter, I kept the salt as it was (unlike a lot of other reviewers). I also didn't have a sifter (I'm a college student!) so I just mixed the dry ingredients really well with a fork... lol. The pancakes came out a little too thick, and I had to use a half cup per pancake instead of a 1/4 cup of batter. After two pancakes came out about a half an inch thick, and about four inches in diameter, I added a half cup of milk. The resulting pancakes were a better size, but they didn't taste nearly as good. Another reviewer mentioned that sifting helped make the batter less thick, so that may have been my problem.

'Something Different' Fruit Salad

This is delicious. I used half as much honey (I didn't have any more...) and twice as much cayenne pepper, as well as the full amount of salt. For me, it was perfect! I've never really liked fruit salad because I always felt there was something missing. Now I know what it was. ;) As for the fruit, I used strawberries, pineapple, mandarines, and kiwi. I wanted to throw in some blueberries, but they were too expensive. :/ As for the salt, it's definitely not too much. Granted, I eat a lot of salty foods, so in my opinion, salt needs to be added to everything... [edit]: My boyfriend hated it. *sigh* And this is the guy who puts onions on his strawberry ice cream for fun.

Classic Peanut Butter Cookies

Ok, to start, the flavor of these cookies is phenomenal. Absolutely delicious. The problem is, you definitely should make these cookies a couple of times before you plan on taking them to any parties. My first try resulted in underdone peanut butter pancakes, and overdone peanut butter frisbees. The cookies flattened out literally to be about an eighth of an inch thick. Not cool. They also spread so wide, that I had beautiful octagonally shaped cookies after I had cut them all apart. After shoving the dough back into the fridge for few days due to frustration, I tried again, and discovered a few changes that make for better cookies. They still don't look like the ones in the picture, but oh well. For one, cool the dough longer than an hour. Three days is perhaps a bit long, but definitely give it a good, solid amount of time in the fridge. Next, don't squish the balls done with a fork. The melting butter and peanut butter doesn't need any help going flat. There aren't any cute fork imprints, but after your cookie has turned into a manhole cover, you don't see the fork marks anyways. Third, after baking, the cookies are going to be really squishy. You're going to think they're not done. Take them out anyways, and carefully move them from the hot baking sheet to a cool, flat surface (like plates, not racks!!). The cookies will cool and be nice and soft, but will harden a bit too, so you can actually eat them. I also added white chocolate chunks, which was yummy.

This is a great recipe if you forgot to go grocery shopping before a holiday weekend, and all the stores are closed...*ahem* I didn't have any broccoli or parmesan cheese, so I had to do without. It tasted really good, and had nice, subtle flavor.

Peanut Butter Chocolate Sandwich Cookies

These cookies taste very good. Like one of the other raters said, they come out more like magic middles than sandwich cookies. I used an electric mixer to mix the dough, which made it very airy, and could be the reason that my cookies came out so flat. Next time I'll try mixing by hand to see if that makes a difference. They taste great, though!

Pizza Crust I

Delicious! The dough is a bit sticky coming out of the bread machine, but it's nothing a little extra flour can't help! Definitely roll out the dough thinner than you think is appropriate, though. I had a very thick pizza crust!

Mexican Bean Salad

So friggin' delicious. This is by far the best bean salad I've ever eaten. I made it with black, kidney, navy, and pinto beans and without the corn. The dressing is so good.
