About this Cook
I am a busy wife and mother, who gets pretty wrapped up in making sure that everything is done just right in my home while balancing family and career. Including, quality time as a family, lots of outdoor fun and nutritious foods on our table. My hang-up is it HAS to taste good! You'll find with my recipes that they are high on great taste, mid-low on fat, with a focus on vegetables, fruits and whole grains! We are Lacto Ovo(Dairy and eggs allowed) Vegetarians for the most part, but make the occasional acceptions for fish, entertaining and holidays. I owe all I've learned to both my grandmothers who were/are(one has passed)legendary cooks!
My favorite things to cook
I love all things pasta, and so I try to be kind to my figure by using whole wheat pastas. I am a Gulf Coast girl and LOVE seafood! Mexican is a big favorite, as well as southern dishes. I have found the vegetarian meat replacements you find in the grocery are a tasty substitute, and we haven't missed the fat! They are a fast alteration for favorite dishes, and you just use them where you would ground beef. Most southern food and comfort foods involve high fat and frying, so I've found I am much happier and healthier with these substitutions, and they are super yummy!
My favorite family cooking traditions
My mom and maternal grandmother are Cuban, and my paternal grandmother was a native East Texas girl. They are the ones who taught me, and so their dishes are some of the ones I've cooked the longest and do the best. These women are also the ones who gave me the love and enjoyment that I get when I cook!
My cooking triumphs
I started cooking at about 12 yrs. old to help out with dinners for my large family, since both parents worked. At first I was HORRIBLE, so thank goodness I started young! I would even burn microwave meals! I've gotten progressively better, to the point that now I am known for my dishes! In the last year my husband and I have made a concerted effort to convert to a mostly vegetarian diet. We use the easy meat substitutes in the freezer and produce sections, which are easier and tastier than you'd think. We're both down to our Pre-wed weights and our energy levels are maxed out! Cooking a light meal is a fun way to share time with your partner, and after eating you still have the energy to enjoy each other! Sharing light and delicious recipes with friends has also been a lot of fun, and an easy way to show you care for someone and want them to feel great and healthier!
My cooking tragedies
Mostly in the early years there were some BIG mistakes. I've burned water, yes it's possible! Set a lot of things on fire, or had them just not turn out. It's extremely rare that something doesn't turn out for me now, but it happens. When it doesn't turn out now it's usually when I try a new recipe, and I find I am able to make the appropriate adjustments to make it work beautifully!

Good Old Fashioned Pancakes
Used this recipe in a pinch b/c we were out of mix, and we LOVE THEM!!! We'll never buy the box again!! So light and fluffy!

Simple Maple Syrup
One star, because it had to be. It's maple flavored water!! I even added a coupl tbsp of corn starch to try and thicken it. I don't know how it got such good reviews!?? Maybe it's a yankie thing but we like our syrup thick and velvety!!
