Butter Bean Burgers

These were really good. I used garbanzo beans and pureed them in the blender before adding all other ingredients. I thought they needed more garlic & also added some curry. Overall a great versatile recipe that can be adjusted to taste! Thanks for posting :)

Mexican Casserole

My family gobbled this up. We all really enjoyed!! I followed others tips and kept most of the juice from the beans and corn instead of the water and increased the salsa to about a half cup. I tore up flour tortillas and made two layers. Was not dry at all. I will be making again. Thanks for the recipe.

Honey Mustard BBQ Pork Chops

The whole family enjoyed these. I didn't have time to marinade them at all. I cooked them in a skillet on the stovetop and basted the chops with the marinade a few times, then let them carmelize. It didn't matter, they still tasted great! Next time may increase the honey to thicken it a little.

Green Stuff (Cucumber Guacamole)

This was very tasty. I did modify it by leaving out the water and adding a 1/2 cup of Sour Cream, a splash of vinegar, dill, and a couple of jalepeno slices for a little kick. Very very good!

Dill and Butter Squash

Cucumber Sandwich

I make several variations on this sandwich at least 3 times a week. It is versatile. Sometimes I will add jalepenos and make a wasabi mayo to spread on it instead of cream cheese. It is good with just about any type of veggies you have available at the time. Also is tasty grilled on ciabatta or foccacia bread. Good stuff!

Chinese Pork Chops

Yum! The whole family enjoyed this. The only variations were fresh garlic, powdered ginger and I squeezed the juice of a half a lemon into a ziploc bag and marinated for about 20 minutes (was in a hurry!). They were super tasty and we will definitely make again.
