Maple Walnut Scones

Reviewed: Jan. 24, 2010
These taste great! I was unsure to give it 5 or 4 stars, it was very dry and crumby, BUT I'm not real knowlagable on scones; maybe scones are supposed to be crumby. these ARE TASTY! just serve with something wet; a cream or sauce, they'll be impressed. great with coffee. I took the advice of another reviewer with the frozen grated butter. Also, I don't like walnuts, so I used a cup of chopped fuji apple- YUM!

Marshmallow Brownies

Reviewed: May 20, 2008
thee recipre turned out; wasn't burt/dry/underooked; nothing like that. however, my boyfriend and i did not like it at all; probably because i typically use more natural ingredients.did not taste good and i easily could have made something much better with the time i took for these.

Quick Crescent Taco Pie

Reviewed: Jan. 17, 2010
I thought this would be good with the taco flavor, but the addition of the crescent dough was SO much added calories, that I really needed to hibernate this meal off. I even used reduced fat crescents, fat free sour cream, and vegetarian hamburger, and just found that replacing lettuce and salsa with greasy dough is just 'Americanizing' a good thing that didn't need to be changed. We prefer lettuce and salsa, and the dough didn't make it any less messy or tastier. Actually, this recipe is too high calorie for my taste. I will not make this again.

No Bake Bumpy Peanut Butter Nuggets

Reviewed: Jan. 24, 2010
these are great! i didn't tell my husband they were 'healthy snacks' and he Really liked these. i have made these twice now, and doubled the recipe both times. Next time i make them i want to try rolling them in crushed dried bananas or kashi cereal, or maybe both. anyway, i freeze them in ziploc freezer bags and take them to work; they are thawed by first break and i have four of them with a kashi bar and water- A+++! thank you!

Momma Lamb's Famous Fruit Salad

Reviewed: Jul. 18, 2009
after chilling longer, this tastes better. i used vanilla sugar free fat free pudding (which really does taste good and 'normal') and also used peaches instead of cherries. it was better after it sat a while. if I have anything to make it again for, I will add fresh strawberries and more canned peach chunks........

Buttery Soft Pretzels

Reviewed: May 31, 2008
how i made 'perfect browning': alter&add. reduced water to 3 cups; after dipping, silicone brush on 'lightly, lightly' egg white with tiny sprinkle of more soda. baked on buttered parchment paper. flour: 4 cups, 1and1/3 whole wheat, the rest all purpose. also, melt a stick and a half of light butter in oven and dip each whole pretzel in it, both sides. this really made them 100% better; i just whoofed 3. perfect-0 :)

Coconut Macaroons III

Reviewed: Jan. 31, 2010
this is a great recipe, however it has the potential make a BIG STICKY MESS IF.... trust me use parchment paper, chill it before you start dipping in a cookie scooper, and put the paper on a cooling rack and cool completely before putting them on a display plate or bowl. trust me :) Use sweetened coconut and sweetened fat free condensed milk. (coconut and condensed milk actually have ALOT of saturated fat, and these ARE habit-forming:) also if simple is your kinda thing vanilla is fine, if not add more extracts. Also, for best taste use a freshly opened bag of coconut (not the remnants in fridge from a previous recipe, like I did, it does make a difference :).

Chex® Muddy Buddies®

Reviewed: Oct. 17, 2009
FYI: you can half this recipe and use reduced fat peanut butter, and smart balance light in place of margarine, and it is still delicious! i used one cup wheat chex and the rest was generic rice chex. very good, husband likes it too...

Lemon Snowdrops

Reviewed: Jan. 5, 2010
i used a cookie scooper and a measuring cup to shape these, which saved time and gave me just 14 little sandwiches, and filling to spare. the cookies were not soft, and the filling was a strange texture, like thick transparent goop, nothing like a store sandwich cookie. the flavor was not bad, but not good enough to cover the texture conflict between the crunch and goo. it was really too much butter fat for me to enjoy the lemon. I prefer a light fluffy pairing with lemon, like the lemon blueberry scones on this site, which was SO much better than these.

Lemon Blueberry Drop Scones

Reviewed: Jul. 18, 2009
i used fresh blueberries and fresh squeezed & grated lemon. used light lemon chiffon yogurt by food club (which is incredible by itself). followed the recipe but couldn't resist adding extra lemon zest and a pinch of light brown sugar. also sea salt. and accidentally extra blueberries rolled in the bowl. 3 people that were here to try them really liked them. I was hoping they'd taste alittle more like the yogurt i used. but they were ok. also thanks for the suggestion of paper towels under the rack for drizzle mess.........

Crazy Crust Pizza Dough

Reviewed: Jan. 8, 2014
Nice when the house is too cold for yeast to rise. I gave it 4 stars because it is yeast-less, so naturally it will not be quite as good. I did not give it 5 stars because it stayed soggy in the middle (of an 8 inch pan, half recipe.) I absolutely drowned the pan in olive oil knowing it would be sticky, and it still stuck some in the middle. Basically, it is convenient but not good enough for company. Given how easy it is, I will make this again. Next time I will add more flour, and bake to the brink of burnt before I put anything on it. Also I highly recommend using bread flour rather than AP flour.

Cheesy Butternut Squash Pasta Sauce

Reviewed: Dec. 18, 2013
I would recommend not using it on macaroni (texture is disappointing if expecting it to be mac&cheese.) The onion and garlic really NEEDS to be fresh, for a good flavor. I didn't really like this, so I added a lot of bacon bits - then it was very good.

Cottage Cheese Chicken Enchiladas

Reviewed: Jul. 20, 2009
fussy husband liked this. i used some shortcuts on prep and clean up time to make this work day friendly. mostly saved time by taking a long sheet of aluminum foil, layed it flat on the table to butter it (butter thoroughly) then line the pan with it (saves scrubbing your dish). for the chicken I used great value chicken strips, the breaded precooked kind, actually the breading held the taco flavor Very well. fried it in smart balance butter along with green peppers. (just thaw in microwave and 'fork' it.) also saved time by simply stirring the shredded cheese into the cottage cheese to spoon in all together. we love salsa, so i put one spoon of salsa in each little roll. (note: hot taco seasoning with 'medium' salsa IS a bit Too hot.) he really liked this, so next time when I make it I will adjust the ratio a bit to have more sour cream in these. (also, I used both fat free cottage cheese and light sour cream, he loved it.) also i used the powdered mix enchilada sauce, which was bland, but i added taco seasoning to the bland sauce before mixing everything else. it all came together well, and fairly quickly.....
