Farmer's Market Vegetarian Quesadillas

Reviewed: Aug. 23, 2010
These were delicious and I'll definitely be adding it to my routine. A great break from meat or fish every night. I added a can of black beans to the mix but otherwise didn't change a thing. Highly recommended!

Juiciest Hamburgers Ever

Reviewed: Feb. 19, 2010
These burgers were a big hit with my husband :o). He's a big hunter, so we used ground venison instead and halved the recipe for 1 lb of meat. I didn't have evaporated milk on hand so I took the advice of other reviewers and used a tablespoon of regular milk instead. Will definitely make again!!

Easy to make and delicious! We served it over whole grain rice. The meat was very tender and cooked perfectly. The spices add a nice kick! Will definitely make again.

Enchilada Casserole III

Reviewed: Apr. 4, 2009
I found this recipe while I was trying to figure out what to do with an extra pound and a half of ground turkey that I had after making tacos the night before (I accidentally defrosted the whole 3lb package!) I used a can of enchilada sauce instead of the powdered mix, and because I already cooked the ground meat with taco seasoning I just added the onion powder and garlic salt when I added the sauce. Definitely a keeper :o)

Chicken Tortellini Soup With Zucchini and Tomatoes

Reviewed: Feb. 11, 2009
I had some tortellini in the freezer that I wanted to use when I found this recipe, but didn't get the urge to make it until my husband got sick. It was time consuming but still relatively easy to make and delicious!! I followed the recipe exactly but left out the celery because I forgot to pick some up at the market. I've added it to my recipe box and look forward to making it regularly :o)

Mini Cheesecakes

Reviewed: Dec. 26, 2008
My grandmother made this recipe for many major holidays, and I now carry on the tradition :o). I suggest aluminum cupcake liners because they are sturdier and add to the presentation. I use Comstock pie filling for the top and made 1/3 with cherry, 1/3 with blueberry, and left 1/3 plain for Christmas. They were a big hit! Also, it's much easier to drop in a whole Nilla Wafer on the bottom for the crust, and they come out just as good!

Black Bean, Corn and Turkey Chili

Reviewed: Dec. 27, 2008
I made this tonight for the first time and my husband and I loved it! I took others' suggestions and added a little corn starch to thicken it up a bit, and it was perfect. I served it with corn bread and look forward to having leftovers tomorrow for lunch! :o)

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Dec. 28, 2008
These oatmeal cookies are outstanding! I followed the recipe to a T but pulled them a little early to make sure they'd stay soft and chewy ( I can't stand hard cookies!!). I'll definitely be adding these to my recipe book :o) and can't wait to bring them to work for Pot-Luck Friday!
