Juicy Roasted Chicken

I wanted to make the Fast Chicken Soup Base from this site but I didn't have a roasted chicken laying around. I DID have some chicken leg quarters and half breasts with skin and bone, so I used 2 breasts and one leg with this recipe. Instead of rubbing the outside of the skin with Country Crock, I treated it like a turkey and pulled the skin away from the meat and added spices and butter in the "pockets." When it came out of the oven, I almost changed my mind! The skin was so crisp and flavorful that I couldnt sacrifice it to the soup stock, and that was fine because I added all of the cooking juices and bones instead. I can't wait to try this again, and there is plenty of room to adjust spices for different tastes. Thanks so much!!

Daddy's Popcorn

WOW! I have been strictly microwave for years now, but wanted to make our own for the kids to try, and I know I picked the right instructions here! I didn't actually measure the butter(well, country crock) or the salt, but everything came out great. Thanks so much!

Cheesy Fried Potatoes

Made this for dinner tonight- a huge hit! Called it "country breakfast in a bowl" and the kids gave it 5 stars and went back for more. I did use turkey bacon (which I removed after frying, diced up and threw back in with the cheese), added garlic and paprika and a mix of cheddar and jack cheeses ( way more than called for, lol). Since turkey bacon doesnt add grease, I used a bit of olive oil and it was not too greasy at all. Wonderful idea! Thanks so much

Wine Soaked Mushrooms

i used button mushrooms that were halved so that it would resemble the burgundy mushrooms my hubby and i are so fond of. It was excellent! thought it would be too strong for the kids, but my 9yr old went back for seconds. thumbs up from everyone- thanks so much!!

Mushroom and Swiss Chicken

i was already making burgandy mushrooms when i found this recipe to go with it. Because of that, i chose to top the chicken with a sprinkling of chopped frozen spinach and swiss, but otherwise, followed the recipe. It was wonderful!! kids (2-9) and hubby have already asked for it again! Thanks so much

Pecan Tarts

Made this for Thanksgiving multifamily get together and everyone just loooved them! they didnt have the super gooeyness of a traditional pecan pie, but all the flavor which made it even better to me! One thing I did differently was to not add the pecans to the mixture before pouring- instead I scooped a small amt of pecans in each shell then poured the mix over it. Absolutely wonderful! Thanks

Ellen's Buffalo Meatloaf

ok, i intended to make this exactly as written, but- OOPS!- i screwed up! i wasn't paying attention and added a whole can of diced tomatoes. i quickly scrambled and threw in extra breadcrumbs (as i didn't have multigrain bread) and hoped for the best. My hubby and kids ate it all, and begged for more asap! thanks so much for the recipe, and know it is fairly foolproof!

Roasted Brussels Sprouts

Can't believe i forgot to rate this b4! Tried this recipe about 6 months back, and hubby announced he wouldn't have them any other way. The burnt/crispy parts are best- i halve them as well. Fresh or frozen work- in Alaska, we take what we can get ;) All 3 kids looove them and ask for them, so what could be better than that?! Thank you so very much!!

Annie's Fruit Salsa and Cinnamon Chips

I used a variety of frozen berries and let them thaw in advance. I then made both the dip and the chips the day before, and - wow- it was awesome! My hubby had doubts about the apples, but he was its biggest fan. Thanks for the tip about baking in the mini muffin pan- pure genius!

Coq au Vin alla Italiana

WOW! kids, adults- we all loved it and it made a great hearty meal. I substituted smoked turkey sausage for the sweet italian (I don't eat pork) and served with egg noodles. Next time I will make mashed potatoes to soak up more of the incredible sauce! Thanks for sharing ;)

Hamburger Vegetable Soup

We live in Alaska and this has become a favorite during the winter. I substitute ground turkey for the hamburger and throw in whatever veggies we have on hand and the flavor is wonderful. Anything this good and easy that can make 3 kids and adults happy gets 5 stars!!

Mushroom Stuffed Chicken Rollups

When I made these the first time, they were very bland and somewhat dry. I ended up freezing most, so I gave the leftovers a makeover when they thawed. I made cuts in each piece then coated them with a vodka sauce and sprinkled mozz cheese and baked until heated thru. It was much better this way.

Au Gratin Potatoes II

Wow! Talk about comfort food ;) I have made this many times now, and I can change the soup and completely change the flavor every time. I do use frozen hashbrowns- no need to thaw before you cook- and i add extra sour cream since I probably use more than required. I also add whatever cheese I have on hand, and it always is wonderful. Thanks!
