Crustless Spinach Quiche

Made this last night for the hubby and roomies and they loved it! I used an italian cheese mix because that was what I had on hand, and I also added crumbled bacon and tomatoes. Delicious!

Margarita Grilled Chicken

This chicken was pretty good. It sort of took on a sweet flavor. I marinated mine in the margarita mix without tequila so I added a little cumin, garlic, cilantro, salt and pepper. It took on some nice flavors. I think next time I will chunk it up and make skewers so that the flavors will absorb a little more.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

We loved these cupcakes. My husband gobbled them right up...and after I sent them to his platoon I had other wives calling me and asking me for the recipe! I used premade dough (i was a little short on time) and I used devil's food cake as per another reviewers suggestion and frosted them with chocolate buttercream. They were delicious!!!

Baked Pesto Chicken

This was pretty good. I rubbed my chicken with salt, pepper, and garlic and then tossed it in a plastic bag and marinated it over night. I made it according to the directions the next day and it was so juicy! I sprinkled a little bit of crushed red pepper on top to give it some ooomph and my hubby loved it. Thanks for the recipe!

Braised Balsamic Chicken

This was a great recipe! My husband and I loved it, but of course, I made some changes. Instead of garlic salt, I used 3 cloves of fresh garlic, and added a pinch of salt to the chicken. I also used red onions which gives it a slightly sweeter taste (to combat the tang of the vinegar). I also didn't add the tomatoes (I used 3 fresh plum tomatoes) til the end in order to keep them somewhat firm. Served it over garlic mashed potatoes and it was a hit! Thanks for the great recipe!

Butterscotch Oat Bars

This is a pretty good recipe. Like others before me I added a teaspoon of salt. The recipe is basically the same one off the butterscotch morsels on the Nestle package, so it is obviously a good start. I also added a little more vanilla and extra cinnamon to give it a little more. I also baked at 350 for about 35-40 minutes because I used a slightly different pan size.

No Bake Peanut Butter Pie

This recipe was great! However, I did not think that a 16 oz. whipped topping was necessary. I ended up doubling the peanut butter to even out the taste. My fiancee and his whole marine platoon gobbled these up!! This is a crowd pleaser and so easy to make!
