Easy Marinated Pork Tenderloin

Excellent recipe if soy sauce is reduced a bit. We had a 1.5 lb roast that marinated for 24 hours then put it on the rotisserie for 55 minutes. Perfectly moist and browned. Heated up the marinade and used it as a sauce. Definitely a keeper!

Smokey Chipotle Meatloaf

This was really good! I topped it with Big Al's BBQ sauce because I ran out of the bottled sauce. My family loved it! Can't wait to make sandwiches on Texas toast with the leftovers.

Southwest Chicken

I sliced the chicken after cooking it then let simmer together until the juice was almost gone. Added more cumin and some chili powder and served in corn tortillas. My family loved it!

Kim's Fried Asparagus

I also seasoned the flour with seasoned salt and onion salt. Used 1/2 breadcrumbs and 1/2 Panko mix. It was fabulous! Dip in ranch dressing for a great appetizer!!!

Coconut Macaroons III

Excellent and easy! Mine took longer to cook to get toasted, about 22 minutes. Used an ice cream scoop to mold them after chilling as er other reviews and I got 25 cookies out of this recipe.

Roast Sticky Chicken-Rotisserie Style

I made this again using cut up chicken pieces. I patted the chicken dry with paper towels,put the spices in a plastic bag, added the chicken all at once and shook like heck. Cooked at 350 bottom side up for 30 minutes on baking sheet sprayed with cooking spray then turned and cooked another 25 minutes. It was amazing!!!!!!!!! And just a great reheated for leftovers!

Panko Crusted Mashed Potato Cakes

These were great! I took other reviewers advice and only use 1 egg and then dipped in 1 egg before rolling in the Panko. I added cheese and 1 TB of dry ranch dressing and some salt. I cooked the onion to golden brown before adding for extra flavor. Definitely spray your hands so you can roll them and they wont stick. I fried in EVOO/butter mix. Definitely a keep in my house!!!!

Slow Cooker Mongolian Beef

I used steak I had on hand and cut into strips. Mixed it raw with the cornstarch right in the slow cooker. Threw everything else on top and added 3 dried oriental peppers and cooked on high for 4 hours stirring occasionally. It was amazing!! So thick and saucy!

Grilled Pork Tenderloins

This was the BEST pork tenderloin I have EVER tasted!!!!!!! I only had 5 hours so I cut a 4 lb roast into 1 inch thick chops and marinated in double amount of marinade.
