Army SOS Creamed Ground Beef

This was great! My USMC husband LOVED it. He has been begging me to make creamed beef for a long time. I've been looking for beef recipes that will work with ground bison as that is what we eat. This fit the bill. I doubled it and added some butter as bison is very lean, whole milk from the local dairy and organic worcestershire sauce. I also added sauted onions & garlic and a little parsley. I was so glad to find a recipe that doesn't call for a can of condensed soup. That stuff is vile. Served over homemade buttermilk biscuits this was great.

Pebber Nodder (Danish Christmas Cookies)

These are great! I have made them two Christmases in a row now for our official Scandinavian "7 kinds of cookies" to hand out in gift baskets. I too roll them instead of cutting.

Limpa Bread

This was just plain weird. I am Swedish and we have Limpa bread every Christmas. I decided to try making my own this year and did this recipe first. I thought the addition of cumin was strange from the get-go and I was right. Cumin is NOT a scandinavian spice. If you want authentic Limpa, leave out the cumin and add anise instead. I found a better recipe that used brown sugar, molassas, caraway, anise, fennel and orange juice. That one came out perfect.

Bread Machine Swedish Coffee Bread

My dad was from Sweden. His mom, my grandmother, didn't even speak English, only Swedish, and she lived with us my whole life. She made this bread a LOT and I miss it! This recipe was perfect. Note to other reviewers: it is CARDAMOM bread. It is supposed to taste like cardamom! Also pearl sugar is the traditional topping. You don't mess with tradition!

Spanish-Style Quinoa

This was great. My kids loved it, and my husband, MR. Diehard meat & potatoes chowed it down. He said it kept him full which most vegetarian dishes do not. My kids did as suggested and used it to fill tortillas. This will be in regular rotation in our family! Thank you!

Oat Applesauce Muffins

These were great. I did like other reviewers mentioned and made buttermilk with vinegar and skim milk, added cinnamon and vanilla as well as chopped up a stalk of rhubarb from the garden. I made them as mini-muffins. I love that they have no oil, just the applesauce. My kids loved them and I loved them. Going to make them often.
