Cha Cha's White Chicken Chili
I think this is one of the best chili recipes I have ever made. I love spicy food and thought this was the perfect blend of spice, with one change. I did not have any canned jalepenos on-hand so instead I used one fresh, seeded jalepeno and it was perfect. For the beans I used 1 can garbonzo beans, 1 can cannellini beans and 1 can pinto beans. Before adding the beans I put approx 1/3 of each can (unrinsed) into the blender, pureed and then added everything to the pot. I also grilled my chicken which added a nice layer to the flavor. This would be great to serve to a large group with a variety of toppings and add-ons (rice, crushed tortilla chips, avocado slices, pico de gallo, etc).

Boilermaker Tailgate Chili
I can honestly say this is one of the best chili recipes I have ever tasted. I usually try to make recipes exactly as they shown the first time, and then make changes later to suit my tastes. My husband and I like things on the spicy side, so the only changes I made to this recipe was to use hot italian sausage and 2 jalepeno peppers instead of the green chilies. I also used 3 strips of crumbled bacon, because anything with bacon is even better with more bacon! Served with a sprinkle of cheddar cheese on top, it was absolutely perfect. The combination of meats and spices was so complex and the heat gave it a kick without being too overpowering. Froze half to eat later. Can't wait!

Hot Corn Dip
I made this for a 4th of July party and got rave reviews from everyone. It is unbelievably easy to prepare - took about 10 minutes. I did have to bake it for about 40 minutes to get it very hot. Loved it! Next time I will try it using Ro-tel with habeneros for a spicier version.
