Mexican Bean Salad

Cut back on the sugar and didn't make quite as much dressing as the recipe called for. It was SO good. Used as a salsa. Loved it!

Szechwan Shrimp

Fluffy Peanut Butter Frosting

Pumpkin Cream Cheese Muffins

These are LOVELY! Made a few changes based on reviews...put the cream cheese mixture in the middle muffin. I used muffin liners and I'm glad I did...the cream cheese kind of went to the outside of the muffin instead of staying in the middle (which is no biggie) though I might just try it on top like the recipe says next time. Added a teaspoon of pumpkin spice (in addition to the cinnamon) to the batter. And lastly, I used the whole can of pumpkin. I almost skipped the topping (to avoid washing another dish), but I'm SURE glad I didn't. It was delicious!

Cheese Dip with Beer

To Die For Blueberry Muffins

Ok, I used the basic recipe and doubled it, but did not make the topping. I also added 1 tsp lemon extract to the dough. Then, instead of the topping I made a lemon glaze (3 c. powdered sugar, Juice and zest of 1 lemon, 1 Tbsp. water) and glazed them when they were just cooling. They were RIDICULOUS. For sure the best muffins I've ever made!

Ten Minute Enchilada Sauce

This was really good! I started off by cooking a bit of onion in the oil and cooked it a little bit longer than 10 min...it was SO good. I'll definitely be making this again. Oh, also I just had regular old chili powder and that worked out just fine. I reduced the chili powder by half (per other reviews) and it was perfect!

Beer Dip I

Well, I've made this a number of times...read the recipe wrong the second time and used 2/3 cup of beer instead of 1/3...I liked it better. It's kind of salty and I've started using less of the ranch mix.

Oatmeal Waffles

These were really good. I didn't have quick cooking oats, so I boiled the milk and threw a cup of old fashioned oats in. I ended up having to add more milk though to get the right texture. I used 2TBSP butter and 2TBSP canola oil. Also, I wanted it to be more like oatmeal raisin cookies, so I added raisins and butterscotch chips. The chips kind of made a mess, so next time I think I'll throw them on top after they comeout of the waffle iron. Will def make again!

Grilled Pork Loin Chops

Skipped the ginger and cinnamon (personal preference) and grilled inside on a grill pan. Also ended up marinating for 24 hrs. The bf said they were the best pork chops he's ever eaten. They'll always be the ones I make from now on! Thanks for the recipe!

Best Spanish Rice

This was really good...and easy. I won't be buying the packets or boxes of it anymore! I was lazy and skipped the onion...used onion powder instead. Added some cumin and a little chili powder. Updated - added the onion and adobo seasoning (instead of using broth) it is a 5 star recipe

Tangy Grilled Pork Tenderloin

Got rave reviews. Browned the pork on the stove and then baked at 400 for about 10 min. I deglazed the pan with some white wine and threw in the marinade for a quick and easy sauce.

Hot Bean Dip

We really enjoyed this! I tried it as I was making it and it did seem to need something...so I added half a bottle of taco sauce to the mix and it was EXACTLY what it needed. It realy was delicious!
