Slow Cooker Scalloped Potatoes with Ham

Loved this recipe. Much lighter than traditional scalloped potatoes. I opted to bake this at 350 in the oven. Baked it for an hour in an 13x9 dish using 7-8 medium yellow/gold potatoes and a maple ham steak, diced. Stirred after an hour and cooked it for another 15 minutes to be sure potatoes were done. It didn't seem to have enough sauce so that is why I stirred it. In the end it proved to be a very nice and light, roasted-potatoes consistency, with a light sauce. Great flavor!

Cajun Dirty Rice

Made this to accompany a 4th of July Shrimp Boil. Used 2 packages of Dirty Rice based on an earlier comment, added an additional cup of water to accommodate the extra rice, used only 1/2 lb ground beef and used mild pork sausage instead of beef. Very tasty and had a bit of spice to it, even though I used mild pork sausage and mild Rotel. The result easily filled a 3 quart casserole dish. Will definitely keep this recipe on hand!

Linda's Lasagna

GREAT recipe. I fixed it for the first time with family in town but felt confident enough after reading the reviews to 'try it out' on our guests. Almost everyone had seconds and one person had thirds! I added more crushed tomatoes and cottage cheese than were called for because my grocery store didn't carry the exact sizes called for in the recipe, but it just gave the dish a heartier sauce, which I prefer anyway!
