Shredded Beef Chimichangas

Not too bad. The meat didn't have as much flavor as I had anticipated. I used my pressure cooker to brown the meat and cooked it in the juices. If I make this again after cooking in the pressure cooker & shredding the meat I'd put everything in a pan and boil down the juices for a more concentrated flavor. I may use taco seasoning as some others had suggested along with mixing some of the cheese in with the meat before putting in the tortillas. Definately a work in process, but it does give you something to work with.

Cream Cheese Squares

I have to say the recipe is super easy to make. I did cut the butter down to a little over 1/2 a stick. I also used splenda in with the cream cheese mixture opposed to sugar and reduced fat crescent rolls. I wasn't that impressed with the taste, but my husband said it wasn't bad. So it went to the neighborhood cookout. People loved it and raved about it. My plan was to trash it so I was quite suprised.

Pineapple Cookies III

The cookie had great texture and fairly good taste. There seemed to have a slight taste of the baking soda. However, when you use a glaze you don't notice the hint of baking soda taste. I actually used 1 cup of pineapple/juice and added cinnamon which also helped with the taste. For the glaze, I used 3T pineapple juice and 1 1/2C of powdered sugar. You could half it if you don't want it on all cookies.

Mary's Sugar Cookies

I made up the dough last evening and refridgerated it in 2 batches. Today I set the dough out to make it more workable. I was disappointed it was slightly difficult to work. I probably added close to 1/2+ powder sugar and flour to the dough to make it stiff enough to hold the form and to transfer it to the cookie sheet. Normally 1/4 is fine, but these seem to spread too much and flattened out. The taste is good, but I like fluffier cookies. I think I'll stick with Dora's Christmas Cookies. I do like the almond extract in the dough. Personally it gives the cookies another dimension of taste.

Roasted Cajun Potatoes

The neighbors raved about how good the potatoes tasted. I only made a few substitutions. I used only 1tsp salt and 1tsp I used the All Seasons seasoning salt. I didn't have shallots so I used 1 T of dried minced onions. Wonderful recipe and full of flavor! No one can say this was bland. :)

Philly Steak Sandwich

I really loved these. I believe these will be a monthly staple in our house. I did make some changes. I used round steak sliced extremely thin. I marinated it for a few hours. I left out the peppers and onions because I don't like them. I did saute sliced mushrooms in butter for about 10 min over med. heat. I put the meat, mushrooms, and topped with provolone cheese on the sub roll prior to putting in the oven for 5 min.

Aloha Chicken

Not bad. I would probably make again, but next time I'd leave out most of the soy (not really a soy person). It is a nice deviation from the regular chicken dishes. I used chicken tenderloins so I cut down the cooking time by about half, plus I only had 1lb of chicken. I did reduce the soy some. I made brown rice to go along with it. Maybe next time I'll put more pineapple in it too.

Soft Pineapple Cookies

Very good and light (not necessarily calorie wise). I took them to a neighborhood get together and they went over very well. I had to bake them longer than the 8 to 10. I had a hard time telling when to take them out. I thought there was just a little something lacking maybe cinnamon.

Very Best Blueberry Cobbler!

Very good! I made this for a neighborhood cookout. Suprisingly not much was taken. Well, just more for me and my family. I used a mixture of red berries, black berries, and blueberries. Next time I'd like to add more berries.

Baked Potato Skins

Simply Wonderful! Very flavorful. We had a small neighbors get together and people raved about how good these potatoes were. Shhhh don't tell anyone, but I used older potatoes that were soft. I wasn't sure if they were going to be any good; they were really fantastic. As others suggested I used the olive oil and using bacon bits really was a time saver. I coated the potato with the oil mixture then baked the potatoes for 1 hr at 425 degrees then let the taters sit for about 15 to 20 minutes before scooping out the insides. I followed by coating one side baking 7 min. then the other side and bakinb 7 min.

Unbelievable Chicken

It wasn't bad. It did have a slight vinegar taste dispite adding about 1 T of honey. The chicken was tender and juicy, but that may have been cooking to the correct temperature.

Pumpkin Spice Ring

Frosted Pineapple Cookies

Wonderful light cookies. Great spring time dessert! Like a goof I put too much of the baking powder then realized my error and tried to scoop out the excess. I think that is why my cookies came out very cakelike which I kind of liked. Next time I'll make sure I have an 8oz can of crushed pineapple too. Will definately make them again sometime this year. I made them for a neighborhood get together and there were only about 5 left over. I over heard whispers of who made them and how great they were. Now we have a rule you have to put your name on what you make and have recipes too. LOL

World's Best Lasagna

I was extremely nervous when I first tasted it after removing the oven. I was disappointed from the lack of flavor. However, I had actually made it a day early for my party and everyone raved about the lasagna. I actually ran out. I wasn't even able to get any. I now wish I had made more. I saved time by using Bertoli's Tomato and Basil Spag sauce instead of making the sauce. I still did the pork, beef, garlic, and onion. I even threw in some Italian seasoning. Other than not making the sauce the lasagna recipe was followed exactly. Definitely make a day early. If your having a party, definitely make 2 batches.

Cocktail Meatballs I

These were very well received at my party last night. All were gone and I had to quickly make more. I used the Italian frozen meatballs that are precooked (saves a lot of time). I took another reviewers suggestion about adding worschester, hot sauce, garlic, and ground mustard. I doubled the recipe then learned I didn't have enough grape jelly so I added some blackberry jelly.

Mrs. Sigg's Snickerdoodles

These were scruptious! I only had a 1/2 stick of butter so I halved the recipe. I now wish I could have made the entire batch! Definately take them out at the 8 min mark. I made mine a little on the small side so 8 min may have been slightly too long (my fualt). Regardless, they are still excellent. I know I'll be making these again.

Garlic Top Sirloin Pot Roast

I cooked this in an electric pressure cooker. Excellent. I made minor changes due lack of ingredients. I used dried chopped onions, forgot to add the garlic,and didn't use green peppers. Instead of the spices I used Mrs. Dash.

Best Chocolate Chip Cookies

These cookies are definately not the Best. On the contrary they are just average and lack flavor, basically just plain. They did bake up fine although I had to increase the time to about 13min. The outside had just a slight crunch and the rest was soft and had a nice color to them. I followed the recipe completely. Don't think I'd make these again.

Pineapple Pretzel Salad

This was awesome, especially if you like pineapple. Low and behold I was one can shy of the crushed pineapple, but I had rings that I cut up while in the can. Still turned out great and I got great compliments at the neighbor's cookout and even a few requests for the recipe. Super simple to make! Definately will be made again!

Santa's Favorite Cake

This was absolutely wonderful. I followed the ingredient list to a T. Instead of making a 3 layer cake I decided to make cupcakes from the top layer. My only suggestion is to reduce the amount of peppermint extract to 1/2 for the icing. I did reduce by 1/4, but I still a little strong.
