About this Cook
My husband and I are owned by 4 four-legged children: Alex and Sophie, Hailey and Jasmine two cockers & two boxers). I'm trying to learn to cook healthier.
My favorite things to cook
I like cooking Italian and American foods.
My cooking triumphs
I made the best cheesecake off this site. It was the white chocolate raspberry cheesecake. It was such a hit that I had to make it 3 additional times within a months time.
My cooking tragedies
I inevitably overcook pork loins and beef for BBQ in the crock pot.

Holiday Chicken Salad
Made this several times now. It's great to use up leftover rotisserie chicken or leftover turkey. I lighten it up a little by using light mayo and replacing 2/3 of the Mayo with plain nonfat greek yogurt. I follow the remainder of the recipe. First time I took others advise and added Chinese 5 spice...don't do it. I almost didn't ever make it again. Great to use in a tortilla wrap with spinach!

Healthier Apple Crisp II
Wonderful! The only substitution I made was pecans vs walnuts and doubled the cinnamon based on other reviews. I also lightened it up just a little bit more by using the brown sugar splenda and the domino light sugar. I also used a hint of lemon juice. Highly recommend!

Alice Chicken
Super, super easy recipe! Great with or without the mushrooms. I'll cut both a slice of monterey jack and colby jack cheese from the block cheeses. Very flavorful and if done correctly it shouldn't be dry. If the breasts are really large I'll cut them in half to make them thinner. Great to have leftovers for lunches! Definately have put this in the regular dinner rotation. I typically leave out the bacon just to save on fat and calories. I usually just make honey mustard from one of the recipes from this site. A note on the broiler: don't use the top rack of the oven with the broiler pan, drop it down to the next rack. I also put foil in the bottom of the broiler pan for easy clean up (of at least one part of the pan).
