Fish Chowder II

The is a very easy and very good base from which to start..... I cut the recipe in half. Also, anytime a recipe calls for water.. I will usually substitute with a low sodium broth = more flavor... in this case 2 cups of chicken broth (didn't want an overwhelming fish taste). I also added 1/2 cup of frozen corn, because we like corn in our chowder. I only used a cup of whole milk (half recipe used) and I also added about 10 med frozen raw shrimp chopped up. Gave the chowder that pleasant undertones of a seafood base being used. This was a very good starter base thanks

Spicy Three Pepper Hummus

This is very very close to that "popular brand" of hummus. I didn't have tahini so I did as another user suggested and tried peanut butter. I would not recommend that and next time I would just substitute with more olive oil or just more water. The peanut butter was too strong of a flavor. The overall result was very good... Thanks for a great recipe.

Beer Batter Fish Made Great

Interesting...I liked the flavor of the batter. I added about a teaspoon of onion powder which rounded out the flavor. I rolled my fish in flour before batter and the batter stuck like glue. I will agree with some of the other reviews ... the batter absorbs and holds the oil... this is a TRUE fish and chips batter, so it was on the greasy side but still delicious!!! We will make this again.

Baked Chicken on Rice

Way too salty. Would not make this again. I like the intense onion flavor, so there has to be a better way to get that flavor without all the salt.

Grilled Chicken Thighs Tandoori

I have made this twice. The first time I omitted the paprika (not a big fan) and the second time I made it "as is" but used chicken breast. I loved it the first time. The meat was flavorful and moist. The second time the chicken breast were good, but as can happen with chicken breast, a little dry. Also, I knew I did not like paprika and it gave the dish a strong flavor that I just didn't care for. I will make this part of our "regulars" and adjust the spices my way... again it was very good and everyone, even my very picky husband, loved it.

Double Chocolate Pie

I followed this recipe exactly as written and my family did not like it. The taste is sweet... too sweet. The texture, was like pudding. It wasn't quite as runny as one of the other reviewers said, but it had a difficult time keeping it's shape when sliced and the remaining pie, after a while, wanted to fill the space. Won't be making this one again... still on my search for the ultimate chocolate cream pie!!

Southwestern Roasted Corn Salad

This is a great idea on how to use up leftover grilled/roasted corn. However the flavors just don't blend well. If I make this again, I will measure the lime juice. I had three limes and the taste of lime was overpowering - also, too much cilantro - initially no one in my family liked this recipe. It took a lot of adjusting to get the flavors to blend into a dressing that I could actually serve and not kill the taste of the roasted corn - if you're not a "foodie" then you could save a lot of time by using your favorite citrus dressing as a substitute for the homemade dressing. My next go will be with a cream/mayo based dressing with a little smoke flavoring added to enhance the roasted corn.

Banana Sour Cream Bread

OH YEAH BABY.... this is THE best banana bread I have ever made... came out PERFECT. I cut the recipe in 1/2.. and now wish that I had not. The loaf was gone in 3 days... this is a keeper!

High Temperature Eye-of-Round Roast

You have to have a great oven to do this... I started with a 4.5 lb roast..I did 6 minutes per pound (looking for rare)..and then 2 hours and it was medium... and tough.. not as tender as I would have liked...it's only tender if you cut the slices 1/4" or less...I would do this again.. but I need a meat slicer..this makes GREAT sandwiches!!.. good flavor
