Super-easy and very good. I wouldn't necessarily make this as a company dish, but for a quick evening meal, you can't beat this dish.
Here are my changes and recommendations:
1) I doubled the Parmesan cheese and bread crumbs. I also used Italian seasoned bread crumbs.
2) In the topping I also added a lot of spices - cayenne pepper, chili pepper, basil, etc. Just play around and add whatever suits your fancy. Have fun w/ spices.
3) The next time I make I will marinate the breasts in a light Italian dressing to make them even juicier.
This is a great recipe for an easy weekday night dinner. I served w/ broccoli rice, bagged Caesar salad and rolls.
