Jim's Macaroni Salad

Super yummy. I used shells instead of macaroni and added in 1/2 tsp of garlic and 1 tbl of grey poupon. Also, used sweet relish instead of pickles and "seasons blend" instead of having to chop all the vegggies. Left out the eggs, pimentos, olives, and cheese simply because I thought that would be too much for my taste, though it might be a little bland without them for the rest of you. I thought this salad was perfect.

Country Fried Squash

My aunt used to make this for me all the time when I'd go visit her every summer. I have no idea what her recipe is other than her using squash straight from her garden, but this definitely hits the spot for me!

Ham with Honey and Brown Sugar Glaze

Best Egg Rolls

I never thought homemade eggrolls would be so easy but alas, they are! They taste just as great with ground beed or turkey too. My only suggestion is too add more cabbage. i didn't think there was enough, but then again I prefer more cabbage than meat in my eggrolls.

Peppermint Biscotti

I thought larger chucks of peppermint would be more visually appealing.... mistake. The biscotti broke apart in a lot of places when I tried to cut it because of them and rolling the biscotti in larger pieces was as equally disappointing. I will make this again but with finer crushed peppermint in the future.

Slow Cooker Chicken and Dumplings

This makes a great base recipe. I added a bag of frozen veggies and filled with chicken broth instead of water. Also I only had one can of soup which was cream of broccoli so I used that and equal parts cream. It turned out great!

Chili I

I love chili and this recipe is amazing. I'm not much of a coffee drinker so I didn't feel like making any and it still came out fabulous. I did add an extra pepper...with the seeds and also I cut the beef broth in half and added an equal part of spicy V8.

Slow-Cooked Chili

This was a great simple recipe. We added half a packet of McCorrmicks chili seasonings in addition to the other seasonings. Also an extra 6 oz. of tomato sauce (flavored with garlic.) We used the Rotel mild chili blend and 1/2 cup of sliced jalanpenos for a little kick and it turned out awesome.

Cajun Corn and Crab Bisque

This bisque was awesome but a little too bland so I used about 2 tablespoons of Tony Chachere's (cajun seasoning) and now it's tastes like something I would order straight out of new orleans.
