Easy Oatmeal Muffins

These were excellent! I make a lot of muffins and I am always looking for new recipes. I used the old-fashioned oats and added some craisins to the batter. These had a moist texture. LOts of "add-in" possibilities. Today I'm making them with salted peanuts. Yumyum!

Excellent and Healthy Cornbread

I made this late last night to use for johnny cake this morning......it is absoulutely yummy, not too sweet and with a good corn flavor. I will make this very often. Thanks for the great recipe!

Simple Delicious Salad

This really is a simple and delicious salad. There are a lot of variations possible. I substituted turkey bacon for the real bacon and added some shredded cheese. I doubleed the recipe to make a large dinner salad and served it with a loaf od french bread. My family scarfed it down. Definately a "make-again".

Homemade Refrigerator Pickles

I just made these for the second time and both times they are outstanding! This is a very variable recipe. This time I used a combination of red wine vinegar and white balsamic vinegar and reduced the sugar by half. I used sweet red, yellow and orange bell peppers minced finely, and I used diced red onions--the colors are so pretty in the jars. For seasoning I added to the boiling vinegars, sugar, peppers and onion: Herbs de Provence, garlic slivers, ginger puree, whole cloves and peppercorns. The aroma was very zingy and the flavor yum as can be. Thanks for a great recipe!

Ojai Roast Turkey with Rosemary, Lemon, and Garlic

This was fabulous! I had a a small family gathering for Thanksgiving this year so we down-sized from a 20 lb bird to an 8 lb breast. I used this recipe and instead of stuffing a whole bird with the chunked lemon and onion I placed the chunks under the breast. The chunks worked as a rack and kept the breast off the bottom of the pan. I used whole stems of rosemary placed over the chunks of onion and lemon instead of chopped rosemary, also added a few sprigs of whole marjoram. I rubbed the puree of lemon, onion and olive oil over the breast, inside it, and still had some to smear under the skin where I could. This made the most delicious turkey breast you could imagine. Whole breasts often are dry to the taste after cooking but this was very moist. My family wants this again!

Chicken Piccata II

This was incredibly yummy and very moist. We had it with basmati rice and a caesar salad and some warm french bread. Hubs deosn't usually rave about new recipes but this is what he calls a "MAKE AGAIN"!

Pumpkin Soup

You can make this soup with any winter squash and it would be good. I add in roasted garlic and a seasoning blend instead of the thyme, and I do saute the onions until they're just browning. I have high blood pressure and must cut down on salt; I use low sodium stocks or broth. Winter Squash and Pumpkin can be bland without some salt, but a few extra shakes of black pepper seem to help a lot. I also don't add in cream, it seems thick enough without it--this also helps cut down on fat content. This soup can easily be doubled or tripled, it's freezes well. It's a great soup that can be made adjusted for sodium or fat restricted diets, you can adjust the seasoning to suit yourself, and it can be made in large batches. And most important--it's really easy to make!

Quinoa Tabbouleh

This was awesome. I made this for Passover and everyone, including my Mother in Law, raved about this dish. My son's girlfriend asked for the recipe so she could make it for her family. I made a variation by doing about a third cilantro to two/thirds parsley, and I think it might be nice topped with some Feta Cheese. This was very, very good...thanks for sharing the recipe. It's not difficult to make and has a lot of flavor.

Chocolate Eclair Cake

Wow! This was incredible! I used honey grahams, diet versions of pudding mix and cool whip, I added a tsp. of vanilla extract to the filling mixture, and topped with just half a can of melted chocolate frosting. I made this yesterday morning for a family get together and served it after dinner. It was scarfed down rapidly by everyone who all thought it was fabulous! This recipe deserves five stars for being super easy and super delicious, if possible I would give extra stars because the ingredients can be subbed with diet versions. PS ~ For variations I think if I used vanilla frosting it might be similar to a Napoleon pastry. Or maybe eliminate the frosting top and just use some shaved chocolate on top.

Mama's Best Broiled Tomato Sandwich

This was really REALLY delicious. I seeded and diced the tomatoes instead of slicing them and cut the marinade and mayo mixtures in half, simply to reduce calories from fat. I topped my sandwiches with lite swiss instead of more parmesan. Yummy! I think that individual herbs could be changed around to whatever you have on hand or you desire, and to make it even simpler a good herb blend would work nicely as a substitution. I love sandwiches for breakfast instead of a plate of eggs....this tomato sandwich makes a great dish for any meal, but as a good and nutritious breakfast this was truly manna from heaven. Next time we have company I will make this recipe on small baguette slices for appetizer. I can't wait for the tomatoes in my garden to start cropping...fresh garden tomatoes will elevate this recipe to culinary nirvana. (That would be 6 stars +) Thanks for sharing this recipe!
