Pizza Dough I

This was a perfect fix to frozen dough that didn't work out for me one evening. Didn't want to have to wait for dough to rise and this hit the mark! Quick, easy and tasted great for a basic recipe.

This was excellent! Ended up using 1/2 cup lemon juice and 1/4 olive oil and marinaded seasoned, boneless chicken breast for about 30 minutes then mixed in the potatoes. After the full hour of cooking I pulled the chicken out of the pan and covered with foil to keep warm and then put the potatoes under the broiler to crisp them up a bit. Chicken was nice and moist, did not dry out at all. This is a keeper in our house for sure.

Jay's Signature Pizza Crust

For my first attempt at homemade pizza, this turned out pretty well. Main problem was the dough was very sticky and could have used more flour from the start. Nothing extra flour couldn't fix. Once I got the dough set in the pan I let it rest for about 30 minutes before putting on the toppings and baking. Was perfect in 16 minutes. Looks like I will be making homemade pizza more often.

Pizza Sauce I

Great pizza sauce! Used a can of diced tomatoes since that was what I had on hand, two cloves of garlic and dried herbs. Will be using again for sure.

Chicken Fried Chicken

Everyone loved it! Next time will try and bake in the oven since really don't like dealing with pan frying. Did as others and coated with seasoned flour first then egg wash and finally with cracker coating. Also, let it rest for about and hour before frying which helped the coating really stick.

Peanut Butter Chip Chocolate Cookies

I'm not a big fan of chocolate based cookies and these changed my taste buds for sure. I didn't have a full 2 cups of peanut butter chips so added some chocolate chunks to the mix. Wonderful!! The hubby was not disappointed.

Spicy Lime-Cilantro Marinated Flank Steak

This really surprised me. I had to add a little extra lime, and in tasting by itself was not too thrilled with the sweetness of the honey. But I used on both flank steak and chicken and it was great. Everyone complimented and thought they were two different marinades. Next time want to try Serrano peppers to give more of a kick.

Roasted Herb Chicken & Potatoes

This was super easy and smelled wonderful while roasting. Only mistake I made is I forgot to stir the potatoes and onions for the first hour, but remeberd for the last 30 minutes and they turned out perfect. Will be making again for sure.

Chocolate Eclair Squares

We love this simple dessert. I have made this twice and planning on making it again for Mother's Day. I have to say the best advise is to make it a day in advance so that it has pleanty of time to set. We also like to use extra cookies and break them in half in order to make them fit the pan better. Really good with french vanilla pudding but think going to try chocolate pudding this time.

Cracked Sugar Cookies I

I rolled most of the balls in sugar/cinnamon mixture which was really yummy. But did keep a few plain in order to rate the cookie as written. Very good, basic sugar cookie recipe and easy to adapt to personal likes. Very quick to whip up.

Grampy's Special Bread

One would never know there was crispy rice cereal in this bread. I made into rolls as others and baked for 17 minutes at 375. Brushed with butter and they were excellent! Made 12 large rolls that are good size for sandwiches. Next time may make a bit small for more of a dinner roll.

Easy Slow Cooker French Dip

Salsa Chicken Rice Casserole

Once you get past the apperance this is a really good dish. Simple and filling. Cooked the rice in my steamer (would be lost without it) and cut down on the cheese because 4 cups looked like over kill and my thighs don't need any help. Good dish to prepare ahead of time and cook at later time. Wonder if would freeze well?

S'mores Crumb Bars

Easy, easy, easy! Everyone really loved these. I'm not a s'mores fan personally so I won't judge for myself. Think next time will add some peanuts to get the sweet/salty thing going.

Slow Cooker Salisbury Steak

Very easy, but just wasn't crazy about how the "steaks" turned out. As someone else posted, kind of reminded me of meatloaf. I think I may give this one another shot because my husband and daughter liked it. Think will do on the stove top though and not cook as long and go from there. Gravy was very good though.

Slow Cooker Parsley Chicken

I really wanted this to be good, but it was just ok. Used boneless chicken breast and didn't cut up the potatoes due to reviews of being too soft. Potatoes were still soft, but that's what you get from the crock pot. Also omitted the salt since many said too salty-the soy sauce was the right amount of salt. My husband said the chicken was ok but the potatoes were very bland. Not sure if will attempt again.

Schweinebraten Pork Roast

Excellent! Did end up adding more liquid about 1/2 way thru. (bud lite w/lime) Nice and moist and made a flavorful gravy. Added 2 cups chicken broth and thickend with cornstarch.
