Spinach Cheese Manicotti

Pretty good. I only used 1 jar of sauce with 3/4c water and it was fine. I did add fresh basil and fresh spinach. Didn't sauté anything before adding, and really enjoyed the fresh flavours (all came out soft though after 45 minutes!) Next time would add more garlic for an extra oomph and more red pepper.

Coconut Shrimp I

This was great! I used chicken, cubed fairly thin. Used 2/3 cup white wine. Made a dipping sauce of 1/4 cup apricot jam, 1 tbs yellow mustard + sriracha to taste

Bacon Wrapped Hamburgers

These were great. Wanted a burger base, just to give me an idea os measurements...dead on. This worked well for 1.5lb of meat. I added a little xtra Worcestershire...give it a tangy kick. Left out the Egg. Great burger base. Topped with blue cheese!

Turtle Cake I

This was great. The filling was fantastic! My bottom layer was a little thicker then my top, which led to some burned/thicker caramel which I really enjoyed. The caramel/butter mix was slow to thicken up, just make sure you give it the recommended amount of time in the microwave, even though it is actually melted in half of that time...the rest of the time is to remove some of the moisture.

Beef and Noodle Bake

This was a great start. I added 1/4 cup corn, 1/4 cup red onion, 2 whole jalapenos not seeded. I like a pretty good kick, I would seed the jalapenos if serving to guest. I used ragu chunky garden pasta sauce. Added a nice sweetness went nice with cheese which also mellowed out the jalapeno. Tastes like the california casserole I used to have at church lunches. My version tasted nothing like hamburger helper! Can't wait to make again!

Italian Spaghetti Sauce with Meatballs

I'm not a huge pasta sauce fan, but this turned out really, my friends who are italian said it was very good. Only comment meatballs were a little bland - made them as stated, but with seasoned bread crumbs.

Curried Coconut Chicken

This was fantastic. A little too sweet if anything, next time a little less sugar. We diced up a mid/small zucchini and squash and served over rice. Can't wait to make again!

Chocolate Chip Pancakes

These were great! I've always used premixed pancake mix, but never again. I added 1/2 cup cooked crumbled bacon to the mix. Everyone also enjoyed the syrup!

Catfish Cakes

This was simply amazing. So many great flavors. I used Ritz crackers, premarined cajun catfish. I lightly coated catfish in olive oil to keep from trying out, and baked catfish at 350 for about 30 minutes. Then followed the reciepe the rest of the way! For an extra treat make the white sauce from the Fish Tacos on this site!!! You could definetly half the amount of onion. I coated some cakes in flour and some normal...not a lot of difference.

Buffalo Chicken Dip

Amazing! My favorite dip hands down. We did use fresh chicken instead of canned, but with the chicken being more of a filler then a key flavor either will be great!

Fish Tacos

I went the quick way and used frozen beer battered fish so I can't comment on the fish. The white sauce however was amazing. I'll be making this any time I have fish from now on. Had the perfect amount of zing to it!

BLT Pizza

My mother was a huge fan of this pizza when our home town pizza place used to make it. This wasn't as good, but very close! If you enjoy a BLT you will love this! Don't skimp on the bacon.
