Norwegian Pancakes - Pannekaken

Our family has made these for a generations, except we call them Swedish Pancakes! The beauty of this recipe is that you can add a little more liquid and make the pancake even thinner. We eat them, one at a time, by lying the pancake flat on a plate and putting a "line" of warm syrup down the center, then we roll the pancake into a "tube". My mother-in-law eats them with sugar or jam! Thank you for this posting! It's so good to share the Scandanavian joy!

Classic Waffles

Waffles had a wonderful, light taste, but they didn't rise as high as I expected (based on the pictures I saw), thus the four-star rating. I took the advice, and blended in the beaten egg whites last, and the batter was just filled with air! I'll definitely be making these again, and hubby is thrilled that I doubled the recipe for him to have homemade waffles in the freezer!

Lemon Herb Dip

The dip was a hit at my luncheon, but I thought the thyme was a bit strong. Will reduce the amount next time I make it. Otherwise a great dip!

Taco Bake II

This recipe was DEEElicious! It won the approval of my entire family, which is no small feat! I followed the recipe except for the following: I only had one pound of ground beef, and I added one can of Cream of Mushroom soup to cut the spicy-ness. I put a little dollop of sour cream on top and served it with a green salad and some dessert, and it was PERFECT! The recipe is now going to be in a permanent spot in my recipe book and will be used for church potlucks as well as for a regular meal in our family home.

Grilled Apple and Swiss Cheese Sandwich

This recipe is even better if you add a very thinly sliced red onion to it! I like to put mine in a waffle-maker to cook, too! Kids love the pattern it makes on the outside of the bread.

Mini Meatloaves

Half the family didn't care for the flavor of the cheese in the meatloaf, and the other half loved it. It made some amazing cold meatloaf sandwiches the next day! Will make the recipe again, but I'll cut back on the sweetness in the ketchup glaze.

Lemon Scones

Made the recipe as printed except I used the zest of one whole lemon. Dough was a little dry to work with, but finished product had a great flavor. I used the juice from the lemon to mix with confectioners sugar and drizzled that over the scones. DELICIOUS! Will use this recipe again and again!

Mild Cheesy Chicken Enchiladas

Great recipe! I followed the recipe except that I didn't have enough sour cream, so I substituted ranch dressing. It gave the dish just a little more excitement! My husband wanted chili sauce over his, and his parents (who live with us) wanted chili beans over theirs. Everyone was happy, which is rare! Thanks for a great 'basic' recipe from which excitement grew!
