Shrimp Marinaders

I used this as a marinade for peeled raw shrimp and everyone LOVED it. I marinated it overnight in the fridge and cooked the shrimp skewered on the grill. Excellent!! I am thinking of trying this as a chicken marinade as well.

Twice Baked Sweet Potatoes

WAAAAY to sweet and mushy for us. The entire family didn't like this dish and we all love sweet potatoes. I won't be making this one again.

Lime Chicken Soft Tacos

absolutely wonderful! I wish I'd doubled this recipe because my family couldn't get enough of them. I used fresh cilantro instead of the oregano. The chicken makes excellent leftovers for tacos the next day. Five stars and will be making again!

Absolutely wonderful! I double the batch and use twice as much lime as called for. Someone mentioned not to blend for too long - I agree. About 30 seconds is almost too long. WONDERFUL recipe!

Flat Iron Steak with Three Pepper Rub

I used this recipe tonight. I think it's a pretty good recipe but much too salty for our taste. Everyone at dinner said it was good but way too salty. If I use this again I'll cut the salt down to 1/2 tsp and see how that goes.

Glenn's Marinated Pork Shoulder

Excellent marinade but 4 hours isn't long enough. I wouldn't waste your time or the ingredients unless you can marinate overnight. I cooked mine in the oven @ 275 for about 4 hours and drove everyone in the house crazy with the wonderful aroma. I'll use this one again but marinate overnight.

I did not care for this recipe. They left a greasy film in your mouth and they had the texture of a piece of bread. Look for a recipe that uses butter instead of shortening.

The Best Chocolate Cake You Ever Ate

WONDERFUL! Not many recipes make it printed and in my actual kitchen files but this one is a keeper. A little more on the cooking time was necessary but other than that I didn't change a thing.

Baked Pesto Chicken

This is a great idea for a meal but I can't give it 5 stars as it is. It needs Feta cheese and sun dried tomatoes to replace what is called for in the recipe. This is a basic "throw together because you have nothing else in the fridge" meal. It could be 5 starts with a little work.

Savory Vegetable Beef Stew

Just made this tonight and it was absolutely wonderful! I'm picky, picky, picky and I have only good things to say about this recipe. The only change I made was to add some corn, peas and green beans because I like a little color in my stew, but other than that I followed all directions. Excellent recipe.

Enchilada Casserole III

I followed the recipe to a "T" and it was more work than I'd like to put into a casserole dish like this. Flavor was excellent but it had a mushy texture that I didn't like. It seemed more like something you should stuff a chili pepper with. I didn't like it as a main dish.

World's Best Lasagna

Wonderful! If you make this lasagna don't fiddle with the recipe. It's perfection as written. Everyone raved about it and my Mother even asked me to email her a copy. Five stars, without a doubt.

Delicious Ham and Potato Soup

I have to give this 5 stars because it's simple to make and is absolutely wonderful. Just excellent! This is a keeper for me. Add a little crumbled bacon on the top of each bowl before serving.

Pork Chops Stuffed with Smoked Gouda and Bacon

Absolutely wonderful recipe. I used boneless chops that were about 1 1/2" thick. Cooked them on charcoal grill (lid closed and not too thick of a base of coals) 9 minutes on one side and 10 on the other. After I flipped them I added thinly sliced Roma Tomatoes and sprinkled a little more parsely on top. Other than that I didn't change a thing. Excellent recipe...I've printed it and it's been added to my book. Five stars!

Cream of Broccoli Soup III

This recipe is exactly what I was looking for. I didn’t want the thickness, carbs or calories of a heavy cheesy soup as I’m on the diet from hell. I found this was a perfect solution for lunch. Packed with nutrients and very few carbs. Unlike others I didn’t find it to be too thin. You can’t make this thinking you’re making the traditional cream of broccoli cheesy soup. In my opinion it’s fabulous! Only change I made was add one additional carrot and used 1% milk to lower the fat. For those who still feel the soup is too thin for your taste add 1tbls of corn starch rather than the potato. Potato has around 30grams of carbs where the corn starch only has 7. Perfection in a bowl!
