Mardi Gras King Cake
This was great. I made it for my class and they all loved it. , I subbed for whole wheat flour. My kids were eating whole grains and didn't even know it. I made it into one big huge cake and put it in a bundt pan to hold its shape while baking. I was a little too impatient, so I didn't let it rise enough before baking, but if fluffed right up during baking and it didn't seem heavy at all.

Vegetarian Kale Soup
This is sooo delicious and healthy!! I used a little more kale. I think this recipe would be even better with chickpeas instead of white beans.

Black Magic Cake
I really liked this cake. It was fluffy and light. I used a little bit of canned pumpkin for some of the oil (maybe 1/4 cup of pumpkin and 1/4 cup of oil) and it turned out great. I think I would use dark chocolate powder to bump up the chocolate flavor and add walnuts. I didn't frost it as it was sweet enough to stand on its own.
