Spinach Brownies

I took everyone's advice and jazzed it up a bit. I added in some cooked bacon chopped up, a small tomato diced and I only had a bit of mozz.ch, so I added in some chopped up swiss. I sauteed the onion w/ some garlic. Also added in fresh herbs of parsley & thyme, only because I have a ton of it fr my garden. I really think you can add in whatever and it would still be good. I'm giving it to my company later today and that will be the real test. Ps. I only used a little butter, 1/2 stick is way too much, when you are watching what you eat.

Fresh Tomato Pie

YUM, great recipe in using up the summer tomatoes. I made it last wk. with the pie crust and this wk. I made it with a pre baked pizza crust. I like doing dijon mustard on the bottom , before I start the layers and because I'm watching calories, I did cut down on the cheese and mayo. It still came out great....It's a Keeper.

Fire-Roasted Tomato and Spinach Pasta

I made this last night for a Valentines Dinner. I have to say this was quick and easy. I used a bit more chopped garlic, about 3 Tbl. of chopped onion saute'd up, a l lb. box of whole wheat pasta and I added in Shrimp and it came out Fabulous. This is a keeper and I will be making it in the future for company. Just add a interesting salad and you have a great dinner. It literally took me ten minutes to throw this sauce together.

Fig and Olive Tapenade

I made this for my Memorial Day party. It was quite the hit. I pretty much made it as the recipe stated, except I put it over goat cheese. Wonderful. My guest ate it within minutes...Thank God, I had a package of Cream Cheese in the fridge, because I did have leftovers of the mix. I put the remainder over the cream cheese and again, gone within minutes...Guests preferrred the goat cheese over cream cheese and I will be making this again. Loved it.

Stuffed Jalapenos III

I made these for a BBQ. I only had regular cream cheese, that I jazzed up w/ some cayene pepper and mixed herbs. Only, because I know, they would of been bland, w/out the jazzing. They cooked in about 40 mins. and were the hit of the party. If your really not into too much hotness, skip the cayene.

Peanut Butter Vegetable Chicken Soup

This recipe looked interesting and tasted pretty good. Nobody in the family could guess the secret ingrediant of P.B. I pretty much followed the recipe, I did saute the onions, celery, garlic first and used a whole can of tomatoes. I added everything into my crock pot and cooked on high for 1 hr., then low for 3. I did taste it, and it was a bit bland for my taste, so I did add in extra seasonings, of basil, Lawrys seasoned salt, Seasoned Pepper and a few shakes of Tony Chachere's. Was awesome with the extra Jazz.

Lebanese Baked Eggplant

This was very good and different. Even my husband liked it. I did add some garlic and extra spices. Next time , I will add a extra can of tomatoes and I'll cover it w/foil. It took forever to cook uncovered and the top was a little dry. I will make it again, with those suggestions

Burgundy Pork Tenderloin

I made this last night for dinner. I used 1 cup Red wine/1 cup beef broth. I used some sliced shallots and No celery. I did buy one packet of gravy mix, and I had to dig through my cabinets to find another, which it needed to thicken up for a decent gravy. Yes, you could of used some flour. All in all, the pork came out pretty good. Would I make it again, like this? Not so sure. It was only Ok, in my eyes.

Spicy Mango Sweet Potato Chicken

I made it per recipe. I liked it fine. My friends, weren't all that thrilled w/it. I think because of the sweetness of it. Would I serve it again to friends, no; for me, again I liked it.

Roast Sticky Chicken-Rotisserie Style

I made it, somewhat like the recipe. I used all the spices, but I cooked it at 300 for 2 hrs. then I had to push it up to 350 to get dinner on the table. I used a 7 lb. chicken and it came out all right. The taste was fine, and it was somewhat juicy. I just didn't have the timt to cook it for 5 hrs. on 250. I think I'll stick with my way of cooking 20 mins. a lb. on 350 and call it a day.

Slow Drunk Roasted Chicken

I make Roasted Chicken all the time and this recipe was boring and really had no taste. With the two temperture changes, and it being covered the first hr., it did come out moist. Moist is always good but, bland is not. For those who have not tried this yet,,,add some spices of your choice and I'm sure it would get a better rating.
