Slow Cooker Stuffing

Cooked some in slow cooker (turned out like it had too much butter in it) and some in oven...the one in the oven was PERFECT.

Crispy Rosemary Chicken and Fries

I used Idaho potatoes (because that's what I had) and cut them into large steak-fries. Cut boneless skinless chicken breasts into tenders about 1" in width. I baked the fries for about 20 minutes before adding chicken, but I could have done 30-40 so my chicken would not have gotten a little dry. Smelled OUTRAGEOUS baking in the oven, delicious dish!

Pasta Lasagna

Good quick fix if you're looking for lasagna flavor without as much work. I used a pound of seasoned ground beef (from the freezer) and did not double anything else...turned out great! Baked it in 5 small aluminum pans for (large) 'individual' servings and took some to the neighbor!

Blue Bacon Stuffed Mushrooms

This recipe goes GREAT as a side with grilled filet mignon. Save the trouble of trying use a blender! Just use a fork or mixer. We're hooked & will make this one again.

Key Lime Cheesecake II

Followed suggestions on adding extra egg and cream cheese, less key lime juice(2/3c), plus adding some powdered sugar(1/4c) and lime zest. Cooked in water bath but had to cook about 15 minutes longer than suggested. Texture was awesome and didn't crack at all, but I would have preferred a sweeter, less tart cheesecake. Next time...

Cowboy Oatmeal Cookies

Added the 1 tsp vanilla, used 3 cups instant oatmeal and butterscotch chips as others did... here's the kicker. I added a pinch of ground clove, ground allspice and cinnamon, 1/4 c raisins, 1/4 c coconut and 1/4 c chopped pecans. I wish I would have put chocolate chips in too! This cookie is VERY moist and tasty! Can't wait to serve them!

Breakfast Casserole

Doubled the recipe but used a pound of bacon (instead of sausage)and cut it up before frying, rinsing, draining and put on paper towel. I baked about 15 extra minutes because it was still "jiggly" after 30 minutes. Delicious, the overnight guests were impressed.

Garden Pasta Salad

I didn't have tomatoes, but did add jumbo black olives cut in half. I really liked this the first day and thought it would be better the next, but not so much. Would still serve again!

Banana Upside-Down Cake

EASY!! I used a butter-flavored cake for the cake part and threw in a little flaked coconut over the nuts before the cake. I baked them in two 9in. pans and stacked them straight from the pan. What a great dessert... moist, tasty!

Twice Baked Potatoes

Love the spicy kick! The ONLY thing I would change about the recipe is that the potatoes need to be mashed some before adding them to the mix. Otherwise...they ought to be against the law! Will do this one again!

Spinach Chicken Enchiladas

This recipe could make 5 stars with a little more kick! Adding green chiles and cumin, plus maybe some jalepenos? We like more spice and flavor than these had, but it would be easily adjusted!

Baked Meaty Beans

New favorite! Used more baked beans, no black beans (none in the cabinet) along with reg. brown sugar instead of dark for the same reason! Put 1 T. molasses to give a dark sweet kick. Could not find chipotle sauce, so I used hot sauce (about 1/8 C.) and it was GREAT. Don't know what could make this recipe better!

Cucumber Sandwiches III

Made this for a baby shower and there wasn't one person who didn't ask, "Who made the cucumber sandwiches?" I used a zester to make pretty stripes on the cucumber skin and sliced them with a wavy knife (they were ripple cut). The presentation of the cucumbers made all the difference, but the recipe was the BEST!
