Dark Chocolate Cake I

For my sister-in-law's birthday, I made this exactly as directed. Used a chocolate custard filling and chocolate butter cream frosting. My husband and I hate cake. He has asked me to make him this cake for Easter, because it was so delicious!

French Bread

so yummy and so easy! I find that I am often too lazy to operate a rolling pin, but I did fine forming the loaves by hand. Make sure to do both egg washes if you want a nice crispy crust. I sprinkled some salt on with the 2nd egg wash and I think that improved the flavor and added interest. This recipe could easily be modified to add herbs or olives or sun dried tomatoes for something really special

Jay's Signature Pizza Crust

Quick and easy and makes a great crust! This will grow a bit when baking, so make sure to roll it really thin. We use it for calzone night - one recipe makes 4 personal sized calzones. I also added some garlic and some herbs to the dough to add interest, but its fine without, if a little bland.

Andrew's Herb Risotto

This was delicious! I made the recipe nearly exactly as stated, but I did have to improvise on some of the herbs and just used what was on hand. There was some lemon pepper, some oregano and I can't really remember what else, but it was all YUM. I had been worried that 1/3 cup of parmesan would not be enough, but it was just right! The flavor was definitely present and fairly strong, but it was not overpowering.

Grandmother's Buttermilk Cornbread

This is my new cornbread recipe! It is so delicious and so easy! I melted the butter in the microwave because it seemed easier. I just melted it right in my big mixing bowl and then mixed everything in. I didn't have buttermilk on hand (I never do), so I mixed 1 oz lemon juice with 7 oz low fat milk. Worked great! Seriously, do not pass this recipe up! It was so moist and delicious, I scraped off the butter because it just doesn't need it... and I always butter bread!

Peanut Butter Noodles

This is super tasty! As I made it, it would have been 4 stars, but I asked my husband what it needed to be 5 stars and he said "chopped peanuts and thicker sauce." I told him that the recipe calls for chopped peanuts, but I omitted them because we didn't have them and the sauce thickened in the fridge. He proceeded to laugh at me. I will be having the rest of this for lunch tomorrow with some steamed zucchini, carrots and celery. Its really tasty! Do not omit the chili! I substituted some mongolian fire oil, because we always seem to have that on hand. I am a spice wuss, but the flavor really becomes fuller when just a little bit of heat is added. It brings out so much more! I will make this many more times!

J.P.'s Big Daddy Biscuits

Yum! needed some biscuits in a hurry. These were easy, fluffy and flavorful! Didn't have any vegetable shortening, so I used butter. Didn't feel like rolling it out, so I just split it up in some extra large muffin tins. This was so quick and easy and had such great results. I will make this many more times!

Herb Rubbed Sirloin Tip Roast

My husband loved this and ir was so easy! I added about a cup of wine to the roasting pan under the rack and covered everything with foil to keep it juicy.

Basic Cream Cheese Frosting

This was exactly what I wanted it to be. Good texture, and the cream cheese flavor wasn't overwhelming. It definitely had a cream cheese character, but it did not overwhelm my cinnamon rolls.

Cinnamon Rolls I

so tasty! I mixed the sugar and cinnamon before sprinkling to ensure even coverage with both. I also melted the butter and brushed it on. Easier than spreading. Turned out perfect. The bottom caramelized a little and that was awesome!

Chicken Enchiladas with Creamy Green Chile Sauce

Had to make some reasonable adjustments on this to suit my vegetarian family. Replaced the chicken broth with some vegetable stock, and the chicken with some green chilis, cilantro and tomatoes. The sauce was a bit on the bland side, so I added some jalapenos and about 1/2 tsp of cumin. Next time, I will either make 1/2 the sauce or 2x the enchiladas. My husband said this was one of the top 5 meals I've made!

Peppy's Pita Bread

This is my new pita recipe! Perfect! Don't have a bread machine, so I mixed it in my stand mixer, kneaded with the bread hook for 10 minues and let rise until double. Cooked it on a pizza stone for 4 minutes. yum.

Green Chile Spinach Quiche

My husband likes neither quiche nor spinach, but he's going back for seconds on this! I halved the recipe, added some shallots and red bell pepper and cut the spinach by half. Didn't have any canned chilis on hand, so I used some anaheims I put up in my freezer last summer. I also sprinkled about 1/4 cup of shredded jack cheese on top just before baking. This is SO good!

Guacamole

This is what guacamole should be! I don't care for tomatoes in my guac, so I didn't add those, and in the end I realized I had forgotten the onion, but it was still fantastic! I'm glad that I cut the recipe in half or we would have over-indulged.
