Vegetable Cornish Pasties

Super tasty! I didn't have very many mushrooms on hand, so I didn't use as many as called for and it would have been nice to have more. These would be made delicious with a good gravy.

Chocolate Cupcakes with Caramel Frosting

The cupcakes themselves are a solid 5. They're moist, delicious and not too sweet. The frosting, however, was only ok. It came out more like a glaze and I had to add a lot of powdered sugar to thicken it up. Then it was too stiff. I think that next time, I will pour it from the pan into my stand mixer and see if I can get it whipped better that way. It tastes like the glaze they put on maple bars.

Cream Filled Cupcakes

I just made the filling. Per the advise of previous reviews, I used a different cupcake recipe. This cream filling is absolutely delicious and so easy to make. Its creamy and fluffy and wonderful!

Graham Crackers

This is exactly what I wanted it to be. I followed the recipe exactly, except that I cut the though into dinosaur shapes rather than into rectangles. I found that the dough becomes cranky and you really can't roll it out more than twice. After the second time, I took all the scraps, rolled them into balls and flattened them for some round blob crackers. These are a lot like the grahams you buy in the store, but not as sugary. My 9 month old loves them and I love that I know what he's eating!

Boston Baked Beans

With a few changes, this is my new baked beans recipe! In order to make it vegetarian, I omitted the bacon entirely and replaces the Worcestershire sauce with 2 tsp vinegar, 1 tsp liquid smoke, 1/2 teaspoon apricot preserves and however much garlic powder came out when I vigorously shook the container. I was cooking for a potluck, but didn't have 4 cups of beans, so I made 1.5X the recipe. That was a LOT of beans. The original recipe is much more than 6 side-dish sized servings! To save time, I cooked the beans in the crockpot on high for a couple of hours instead of soaking them. That was the plan anyway. I forgot about them and overcooked them so they were mushy. Had to stir in the sauce because there was no way it was going to penetrate the slop of the mushed beans. I was sure I'd ruined it, but thought I'd give it a shot anyway. Turns out, the baking time dried out the beans enough to return some of that texture. Got so many compliments on this. YUM. Even the baby couldn't get enough!

Amish White Bread

OK, I'm going to be that guy and rate this based on what I made from it (and how I anticipate it will be after a few more changes), even though I modified the recipe. Anyway, I was looking for a simple sandwich bread, so this recipe with a few simple mods was PERFECT! I cut the sugar to 1/4 cup per prior reviews. I think that was just right. Then, I replaced 2 cups of white flour with wheat flour. It came out with excellent texture and a great, but slightly bland flavor. Bland is ok though, remember I'm making sandwich bread. Anyway, next time, I plan to replace another cup of white flour with a cereal mix to add some crunchies to the bread, because that's what we like. Then this will be my family's new sandwich bread!

Braided Easter Egg Bread

This was delicious and beautiful! Unfortunately, it was so pretty as a centerpiece that no one cut into it on easter! But the slices made great "all in one" snacks later!

Guacamole

This is what guacamole should be! I don't care for tomatoes in my guac, so I didn't add those, and in the end I realized I had forgotten the onion, but it was still fantastic! I'm glad that I cut the recipe in half or we would have over-indulged.

Green Chile Spinach Quiche

My husband likes neither quiche nor spinach, but he's going back for seconds on this! I halved the recipe, added some shallots and red bell pepper and cut the spinach by half. Didn't have any canned chilis on hand, so I used some anaheims I put up in my freezer last summer. I also sprinkled about 1/4 cup of shredded jack cheese on top just before baking. This is SO good!

Colombian Lentils

This was ok, but a bit bland. I found that I had to add a lot more water to it. I also added some garlic, some pepper and some chili sauce, and garnished with green onions. It was pretty decent, but I don't think I'll make this again.

My husband's words "I would not be upset if you made this one again, but I would not be upset if you tried another recipe either." The topping was really good. Used canned peaches though since they aren't in season. Quite tasty!

Peppy's Pita Bread

This is my new pita recipe! Perfect! Don't have a bread machine, so I mixed it in my stand mixer, kneaded with the bread hook for 10 minues and let rise until double. Cooked it on a pizza stone for 4 minutes. yum.

Creamy Italian Dressing I

This is pretty good. Made a half batch to see if my family would like it. Came out really thick, had to thin it out with about 1/4 cup milk, or it was as thick as mayo. Anyway, this is a great alternative to Ranch (which I can't stand), because its nice and creamy. Its also very flavorful and easy to make.

Chicken Enchiladas with Creamy Green Chile Sauce

Had to make some reasonable adjustments on this to suit my vegetarian family. Replaced the chicken broth with some vegetable stock, and the chicken with some green chilis, cilantro and tomatoes. The sauce was a bit on the bland side, so I added some jalapenos and about 1/2 tsp of cumin. Next time, I will either make 1/2 the sauce or 2x the enchiladas. My husband said this was one of the top 5 meals I've made!

Italian Dressing Mix

This is ok. I am looking for a recipe for Italian dressing that tastes more like the kind you buy and less like oil and vinegar. This isn't it. After a few days in the fridge, it mellowed a bit, but it still wasn't what I wanted it to be. I'll hold on to this recipe, because its the best I've found so far, but its just not quite there.
