Beet Salad with Goat Cheese

Reviewed: Nov. 8, 2013
This is delicious! I used pecan instead of walnuts, because I have an allergy. I recommend tossing the greens with about 1/4 of the dressing and adding the beets and cheese on top. The remaining dressing should be reserved for another use. This salad is just delicious! I could eat it every day!

Whipped Cream Cream Cheese Frosting

Reviewed: Jul. 24, 2012
Delicious and easy! This is now my husband's favorite frosting! I use Neufchatel cheese (the low-fat cream cheese) because it softens better.

Roasted Red Pepper Spread

Reviewed: May 17, 2012
This is good, but not to die for. It just tastes like roasted bell peppers, and is a whole lot more work than just roasting them as needed.

Good for You Greek Salad

Reviewed: May 10, 2012
This salad is absolutely lovely! I probably doubled the olives, but otherwise we had this unchanged. I served this with whole-wheat pita bread and hummus. We cut the pita open, speared it with hummus, filled it with salad and topped it with some chopped chard. It was amazing and SO easy. I think this is going to be a new picnic food staple for our family!

Chickpea Salad with Red Onion and Tomato

Reviewed: Apr. 16, 2012
Added some balsalmic vinegar for some more flavor. It was fine, but not great.

Zesty Rice 'N' Bean Casserole

Reviewed: Apr. 3, 2012
This was good, but not spectacular. It tastes better as leftovers than the first time around. Not sure why that is.

Sweet Spinach Salad

Reviewed: Apr. 3, 2012
This tasted like an orange smoothie! There's way too much sugar in the dressing AND way too much dressing for the amount of salad. Next time, I think I'll omit the sugar entirely and cut the dressing in half.

Chrissy's Sweet 'n' Sour Tomato Salad

Reviewed: Apr. 2, 2012
I cut the sugar in half and the dressing was still WAY too sweet. I will try again, cutting it further.

Tasty Collard Greens

Reviewed: Apr. 2, 2012
These were super tasty! I cut the recipe down to 1/4 to feed just me and my husband and we both just gobbled them up!

Buttery Milk Syrup

Reviewed: Apr. 2, 2012
I made this to go with some banana pancakes. I knew the pancakes would have really strong flavor all by themselves, so I didn't want a really flavorful syrup, but this was basically just sugar. I think next time I will try adding some nutmeg or something...

Delicious! Perfect texture! I froze the stuffed chilis before coating them to make them easier to handle.

Creamy Au Gratin Potatoes

Reviewed: Mar. 20, 2012
The creaminess and cheesiness are there, but it needs some more flavor depth. Thinking about adding some other seasonings next time.

Vegetarian Sweet and Sour Meatballs

Reviewed: Feb. 15, 2012
These are ok. The sauce tastes a lot like McDonald's sweet and sour except that there is a strong vinegar and ketchup flavor. Not exactly what I was hoping for.

These were pretty ok. Easy to make. Served them with a bleu cheese sauce. Needed something though. Can't put my finger on it.

Naan

These are awesome! The only thing that I changed was to replace 1/3 of the flour with whole wheat flour, but I always do that.

Vegetarian Jambalaya

Reviewed: Jan. 25, 2012
This was pretty tasty, but it was missing something. I felt that as a main dish, it was too homogeneous. It needed some chunks of something to break it up. I've never had "real" jambalaya before, so I don't know if this is sacrilegious or not, but I think I'll add kidney beans next time to make it a bit more chunky. You could just cut the mushrooms bigger, but my husband doesn't really like mushrooms, so he is not keen on that option.

So tasty! I made the blueberry lemon version. They were nice and crumbly and not tough! I love the grated butter trick. I do this now with all my pie crusts too!
