Roasted Red Pepper Spread

This is good, but not to die for. It just tastes like roasted bell peppers, and is a whole lot more work than just roasting them as needed.

Good for You Greek Salad

This salad is absolutely lovely! I probably doubled the olives, but otherwise we had this unchanged. I served this with whole-wheat pita bread and hummus. We cut the pita open, speared it with hummus, filled it with salad and topped it with some chopped chard. It was amazing and SO easy. I think this is going to be a new picnic food staple for our family!

Sweet Spinach Salad

This tasted like an orange smoothie! There's way too much sugar in the dressing AND way too much dressing for the amount of salad. Next time, I think I'll omit the sugar entirely and cut the dressing in half.

Buttery Milk Syrup

I made this to go with some banana pancakes. I knew the pancakes would have really strong flavor all by themselves, so I didn't want a really flavorful syrup, but this was basically just sugar. I think next time I will try adding some nutmeg or something...

Vegetarian Sweet and Sour Meatballs

These are ok. The sauce tastes a lot like McDonald's sweet and sour except that there is a strong vinegar and ketchup flavor. Not exactly what I was hoping for.

Vegetarian Jambalaya

This was pretty tasty, but it was missing something. I felt that as a main dish, it was too homogeneous. It needed some chunks of something to break it up. I've never had "real" jambalaya before, so I don't know if this is sacrilegious or not, but I think I'll add kidney beans next time to make it a bit more chunky. You could just cut the mushrooms bigger, but my husband doesn't really like mushrooms, so he is not keen on that option.

So tasty! I made the blueberry lemon version. They were nice and crumbly and not tough! I love the grated butter trick. I do this now with all my pie crusts too!

Super tasty! I didn't have very many mushrooms on hand, so I didn't use as many as called for and it would have been nice to have more. These would be made delicious with a good gravy.

Chocolate Cupcakes with Caramel Frosting

The cupcakes themselves are a solid 5. They're moist, delicious and not too sweet. The frosting, however, was only ok. It came out more like a glaze and I had to add a lot of powdered sugar to thicken it up. Then it was too stiff. I think that next time, I will pour it from the pan into my stand mixer and see if I can get it whipped better that way. It tastes like the glaze they put on maple bars.
