Mom's Meatballs

These meatballs were very tasty! I would suggest a few easy variations. First, always saute the onions first before mixing in the meatballs. Second, after you have baked the meatballs, drain the fat and you can put the pan under the broiler for a few minutes to crisp up the edges. Finally, if you need to cook gluten-free, crushed cereal (like Corn Chex) works well instead of crackers.

Gel's Green Beans and Beef

I really liked this recipe- it gives me something to do with ground beef other than hamburgers and meatballs! It was better before I added the flour & water thickener, when the meat was crumbly, so next time I will leave that off. Also, my husband and I liked the level of spices, but the kids said it was too spicy. (They complained, but they ate it!) If you have sensitive palates in your family, cut down on the spices.

Baingan Bharta (Eggplant Curry)

This was good enough, but not great. It had far more onion than eggplant, and came out dry instead of saucy. If I was going to make it again, I would increase the eggplant, and leave the eggplant peel on. I would also reduce the time on high heat at the end, maybe adding some liquid.

Luscious Lemon Snaps

I made a half-batch, with less oil and more lemon juice as other reviewers suggested. The flavor was nice and lemony, but the texture was awful. The cookies were flat and rock hard, not crispy.
