Spaetzle I

This is more a note on how to make Spaetzle without a Spaetzle maker. I've made another recipe from this site a few times and it comes out wonderfully (and has a bit of nutmeg). I have a grill pan with holes in it. It fits right over my large stainless pot which I fill halfway with water ( as they expand upon cooking). I spray the pan on both sides with Pam and just push the dough through over the boiling water. It comes our beautifully. I am going to take the advice of other reviews here and try sauteeing them with chopped onion and butter.

German Spaetzle Dumplings

I never thought I could make Spaetzle from scratch and I'm so happy I found this recipe. I made a double batch and for a quarter of the flour used whole wheat. I don't have a spaetzle maker but improvised by using a vegetable grill pan that had medium sizes round holes. Just placed it over a large pasta pot and mashed it through with a wooden spoon. It couldn't be easier. I made it with Jaegerschnitzle in which I substituted chicken for pork. Thanks for such a great recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

I've never been completely satisfied with the original toll house cookie recipe and have been searching for years for a better tasting cookie. My search has ended. These cookies are phenomenal. They have perfect taste, crunch and texture. Not only is the taste perfection but they look beautiful too. This is my forever Chocolate Chip Cookie recipe!

Aunt Anne's Sesame Cookies

I just made these cookies for the first time and they are an Italian favorite and delish. I may have a suggestion to make prep time a little faster. Instead of taking walnut size pieces of dough grab a handful of dough and roll it out on the counter until desired thickness. You can then cut the strip into 2" pieces. This is the way I do Viennese Baton cookies and it goes very quickly. Do be sure that your hands are not wet from the milk once you get going. Thank you for this great recipe.

Tasty Orange-Oatmeal Muffins

These muffins had a good taste and texture but they stuck terribly to the muffins papers. By the time we peeled the papers off we were all left with just about half of a muffin. I don't know what the problem was but I was glad I wasn't serving them to anyone besides my family.

Enchiladas

I took some of the advice of others and added some additional spices, i.e., chili powder, cumin, s&p and about 3 cloves of minced garlic. I also added a defrosted (and drained) pkg of frozen chopped spinach. Like the previous rater I also put some of the enchilada sauce on the bottom of the pan before baking. This is the second time I've made this and my family really likes it.

Fantasio Bars

The taste of these bars was good but I feel the amount of ingredients are not sufficient for a 9 X 13" pan. I really had to spread the crumb mixture thinly and then had a problem getting the coconut/milk mixture to spread on top of it. I ended up using almost 2 cups of morsels to make a decent layer of chocolate and I spread the nuts on top. I would make them again but would try using a 10 X 13" jelly role pan. You may have to check for baking times with this alteration.

Orzo and Tomato Salad with Feta Cheese

This salad was delicious and a welcome alternative to the usual macaroni salad for steaks & burgers. I prepared it with all ingredients except dill because my family doesn't like it and it was still good. The saltiness of the feta and olives and the citrus from the lemon are perfect together. I'll be making this all summer. Thanks for a great recipe.

Triple Fudge Brownies

Since I am trying to cut down on sugar I made this recipe using the 50% less sugar cake mix and sugar free instant pudding. I also added some walnuts. I don't know how the original recipe would be but I had to spread the mixture in the pan rather than pour it. My family and I were very happy with the results. While the texture wasn't quite brownie-like it had a nice texture and the chocolate taste was terrific. I will definately make these again.
