Homemade Black Bean Veggie Burgers

Reviewed: Apr. 14, 2009
Thanks for the recipe. In recent months I have had a hard time finding the store bought frozen version at my local supermarket. I delightfully found your recipe. It is even better as others stated. We now no longer have to search or over pay for a healthy veggie black bean burger! One can also change veggies based on what is on hand thanks

Spinach Stuffed Chicken Breasts

Reviewed: Apr. 14, 2009
My husband really enjoyed this one. I was told to make it anytime. I paired it with a greek salad. I followed others advice and pre cooked (1/2 way) bacon, blotted up extra grease before adding to chicken breast. Thank you for a good chicken/spinach pairing.

Aunt Shirley's Dietetic Pie

Reviewed: Jan. 11, 2009
Thank you for this recipe. My relative is diabetic and needs to have sugarless desserts. Pieos his favorite. I have read warnings that recipes for sugarless pies often add juice causing hidden/additional sources of sugar. THIS ONE DOES NOT. He enjoyed this one so much stating he liked it better than any other bakery/store bought sugarless he has tried. He asked to take the rest home after the holiday party too. Thank you. It will be used again he is a fan.

Black Bean and Artichoke Burritos

Reviewed: Dec. 22, 2008
I wanted to work on increasing fiber in my diet. Beans are known as a good addition to increase fiber. I was not a black bean fan until this recipe. Nice combination. I enjoyed it. Thank you. I also make extra and freeze some as a quick lunch on the go.

Grilled Mediterranean Vegetable Sandwich

Reviewed: Nov. 8, 2008
My husband liked this one. He loves Garlic. Overtime I altered it slightly to make something simple/quick without mayo. I would toss the veggies in olive oil and use a 1/2 packet of McCormicks Grill Mates Zesty Herb then I would broil the veggies until softened. And add to my slightly toasty bread.

Broccoli Quiche with Mashed Potato Crust

Reviewed: Nov. 5, 2008
Yum. Thank you. I really liked the potato crust as a base to this. Will make & take for Holiday brunches. I altered just a bit but stayed all over true to recipe. My husband is a huge Garlic/Fresh Peppercorn/onion fan so I add them to almost everything I make. I did 2 garlic cloves (pressed) into mashed potato crust. Altered recipe by one small yellow onion, 2 eggs and 1 egg white (instead of 3 eggs)sauteed sliced mushrooms as well to broccoli mix. It is a keeper.

Zucchini Tomato Casserole

Reviewed: Nov. 5, 2008
Yum. Thank you. Currently working on using more veggies in all my cooking. This helped in zucchini season, prepared and served as stuffed pitas. We enjoyed this will make again. Next time I may 1/4 cut bread crumbs needed and do 1 egg plus 1 egg white-instead of 2 full eggs for cholestral purposes.

Debbie's Ultimate Mushroom Dish

Reviewed: Nov. 5, 2008
We enjoyed this one. Simple. Smells great cooking. It does taste like pizza topping so if you are not a pizza person... I love pizza and my husband hates thick doughy crust pizza. For us this recipe fits like a glove with little prep time.

Garlic Prime Rib

Reviewed: May 20, 2008
Thanks for great recipe. I made this last Thanksgiving. I make both a 15 lb Turkey and 10-12lb prime rib. The Prime rib is never left over with this recipe. I got a very fresh roast at my local Butcher-they do not cut it off the bone until pick up (they tie it back to the bone so that it falls away nicely when cooked. It marinated well and cooked great. Will be using recipe every year. My family loves Garlic so it is a hit. Great recipe but if you have and can splurge for local/freshest cut meat at Butcher it is quite a holiday treat.
