Authentic Louisiana Red Beans and Rice

This is a good place to start. I had to add more seasoning, the recipe amounts make it bland. I season to taste so I don't have amounts. I added more Cajun seasoning, cayenne pepper, salt and black pepper. I also cooked the seasoning and herbs with the veggies before adding them to the beans. I had an Italian herb and cheese sausage on hand, so I used that. It was good, but does not compare to the classic andouille sausage.

Amish White Bread

(For the record, it is a sweeter bread than plain white or French bread.) Great recipe! This makes an awesome bread just as the recipe is. To change it up a bit, I add two cups of whole wheat flour in place of two cups of bread four. I made a nice, light wheat bread, I don't care for full on wheat bread.

Carrot Cake III

This is the exact recipe my family has been using for generations. It is absolutely perfect. (In my opinion, pineapples and raisins in carrot cake is a sin. The only changes I make are adding a full tablespoon of cinnamon and leaving the nuts out of the cake and just having it in the frosting, which I add an extra teaspoon of vanilla.)

Scalloped Potatoes and Onions

Great recipe! The sauce had an awesome flavor. I add a little cheese to the suace and seasoned the potatoes and onions with salt and pepper before putting them in the baking dish. I also made a bread crumb topping to add some texture. My husband and I loved it!

Holy ! This is an awesome cookie recipe! I made a quarter of the recipe and it made two dozen cookies. These are my new "go to" cookies. Thanks for sharing!

Fluffy Biscuits

Delicious, very similar to my grandmothers biscuits. I used cold butter instead of shortening, work just as well, just changes the flavor a little.

Chewy Peanut Butter Chocolate Chip Cookies

Great recipe! I've made it twice. The first time I followed the recipe exactly and it was pretty tasty. The next time I made it with an extra generous spoon full of peanut butter, 1-1/2 cups of brown sugar (no white sugar), 1 Tbs. vanilla, and 1 cup of mini chocolate chips. It..Was..Awesome!!

Banana Banana Bread

Great recipe! I made muffins with this recipe. I made a few additions, 1tsp. vanilla, 1tsp cinnamon and 1/2tsp baking powder. Baked for about 10-15 minutes. I might add nuts next time. Thanks for sharing.

Honey Wheat Sandwich Rolls

This bread came out great. I don't have a bread maker, so I made it the old fashioned way. Dissolve honey in warmed milk, stir in 1T (dry-active) yeast and let that rise. Add egg, butter and salt to the liquid. Mix in flour one cup at a time. Allow to rise in an oiled bowl, punch down and kneed before shaping in to form of your choice, I made a loaf. Also, if you don't have bread flour, all-purpose flour works fine in this recipe. I will make this bread again for sure!

The Best Chicken Fried Steak

Excellent recipe! Made a couple changes, personal preference. I used milk instead of buttermilk, to cut out some fat, and added a couple tablespoons of flour to thicken batter. And I made a sausage gravy. I browned country sausage in a sauce pan, removed sausage. Added some extra oil, heated, added flour to make a blond roux. Added hot milk, sausage and salt and pepper. Look at "Super Sausage Gravy" for a good method for making the gravy.

Bill Clinton's Lemon Chess Pie

Very yummy! I cut the sugar down to 1-1/4 cup, that was still a little too sweet for my tastes. I had a nice "custardy" texture. I also mad a fresh lemon whipped cream to serve with it. Also, it makes 1-9" deep dish pie.
