Easy Italian Chicken II

Reviewed: May 9, 2008
This is so easy and tasty. I like this recipe very much and find, with a little crusty bread and a tossed salad, it's a perfect light meal when you don't want to spend a lot of time over hot stove.

Omelet Biscuit Cups

Reviewed: May 15, 2008
I have made these and frozen them with great success. Just microwave them until heated through again. Also, for variety, I've made substitutions, like replacing the ham with chopped cooked bacon, breakfast sausage, and even Mexican chorizo. Just use your favorite omelet fillings and have fun. The only thing I will offer is, if you freeze them, try adding a little more cheese to the top when you reheat them... it seems to help them taste fresher.

Creamy Dill Dipping Sauce

This is a very good, simple sauce. It is excellent with salmon and tuna, as well as vegetables. I served it with salmon and steamed asparagus. It's light and flavorful. Thanks for the recipe!

Salmon Croquettes

Reviewed: Apr. 29, 2009
I used bread crumbs instead of wheat germ. I also used the salmon in a pouch, as opposed to canned and it was very fresh and tasty!

Easy Peach Cobbler

Reviewed: Apr. 29, 2009
I tried this with canned pears and it was really very good. Light yet sweet enough to satisfy. I also added some chopped walnuts to the top when baking. Very nice, simple recipe.

Ultimate Roast Beef Blues Sandwich

Reviewed: Jul. 11, 2009
I LOVE steaks with blue cheese, so I figured I would try this out. The combination of flavors is awesome. The nuts make an amazing taste enhancement! I didn't have fresh basil, so I used dried basil. I am motivated to get fresh basil so I can have the full experience, but even with dried basil this was a 5-star sandwich, in my book!

Bacon Spaghetti

Reviewed: Jul. 15, 2009
I prepared the recipe as written but found it was a little dry, and so, I added just 2 Tbs melted butter, which was just enough to make it very nice.

Parmesan Chicken

Reviewed: Jul. 23, 2009
I used boneless chicken thighs for this, instead of breasts (I prefer the flavor of thighs). It was crisp and flavorful. It was easy and very good! I even submitted a photo of my version!

Sweet Mustard Chicken Bake

Reviewed: Aug. 12, 2009
I used this recipe on chicken thighs. I did make one change, because thighs not as lean as breasts. I omitted the butter entirely and used 1 TBS canola oil to make the sauce a little thinner. The chicken was very flavorful without being overwhelming and I enjoyed it. I will try it with breasts and butter, next time. This is a keeper.

Chicken Piccata III

Reviewed: Oct. 30, 2009
I made this, as written with only one exception: I sauted minced garlic with the mushrooms, instead of using garlic powder. This is a very good recipe and I will be making it again.

Chicken Biscuit Potpie

Reviewed: Jan. 8, 2010
Very nice, basic recipe. I enjoyed it. I did use frozen biscuits that I needed to use up (I thawed them, then rolled then thin), and I used cream of celery soup because I thought it would make it more flavorful. Very good.

'Out of Salad Dressing' Salad Dressing

Reviewed: Jan. 17, 2010
I followed this recipe exactly EXCEPT I used garlic POWDER instead of garlic salt. It's a very good creamy dressing, comparable to what I've had as "Ceasar Dressing" in restaurants. I'm keeping it!

German Chocolate Bars

Yeah, this uses boxed mix and prepared icing, but it makes a reallly rich, good bar without a lot of mess or work. This was perfect for what I needed and I'm adding it to my recipe box. I've also recommended it to friends. Good Stuff!

Spinach Stuffed Chicken Breast

This was simple and very tasty... I loved it and will be serving it again. I may cut the garlic back a little next time, and that's the only reason I didn't give it 5 stars.

Amish Sauerkraut Surprise Custard Pie

Reviewed: Mar. 20, 2010
The pie looked nice (I even submitted a photo), but even with other reveiwers suggestions about adding cinnamon, it still tasted too much like saur kraut. The sweet custard was nice, but the cabbage and vinegar from the kraut was too strong. I even used my hands to squeeze as much liquid as possible from the kraout. Even though I like saur kraut, I won't make this again.

Ruby Drive Sloppy Joes

Reviewed: Mar. 27, 2010
I truly enjoyed this recipe. I was afraid the salsa might make it taste too "southwest" but it was just right... and I didn't have to add onions as I do on the recipe I usually use. It's tangy and sweet as sloppy joes are supposed to be. This one is a keeper.
