Chuck steaks were on sale this past week at the grocery. These particular ones were named "chuck tender steaks" and they looked a lot like filet mignon. They were nearly the same price as ground beef, and so, they got my attention. I bought a package, then wondered if I'd made a mistake. I MORE

I have been cooking most of my life. I was a professional cooking instructor, 2005-2010. I live alone, currently but have cooked for over 200 people 5 days a week, for 5 years. I am now a vocational business instructor.

Basic southern cooking, with some ethnic items tossed in. My fatheris the big cook in the family and (still) loves trying new things.

Thanksgiving dinner... a challenge to coordinate, with many bad events in the past. 2007 was finally a complete success! Timing is everything!
My cooking tragedies
... Thanksgiving dinners, again... seems something is usually underdone, overdone, undone... It's almost like I have some kind of mental block when it comes to Thanksgiving.

Maple Syrup Custard Cups
This is a very nice, simple recipe. I am trying to watch my diet but I still like treats sometimes, so I changed this by using a good quality sugar free syrup and skim milk. Those changes gave a nice product with half the calories of the original version, per serving (about 105 calories / 1/6 of the recipe). Thanks for this easy recipe!

Johnsonville(R) One-Pan Italian
This was really good and really simple. It hit the spot after a long day at work, without having to stress over making a good dinner. I used the Johnsonville chicken & pork mild Italian sausage, which is lower in fat, and followed the rest of the recipe exactly. I was worried about all that water, but it cooked down nicely and looked just like photo #1. It was thick and nice, not soupy at all! Topped with a little parmesan and a small side salad, this dish is tasty and satisfying without being labor-intensive. Super recipe!

Round Steak and Gravy II
I make this a lot and enjoy it. However, I do prefer a couple of changes- I use Golden Mushroom soup, and I add sliced onions and mushrooms on the top of the steak before adding the soup and water. I like this flavor better. But this is a good, simple recipe.
