Eggless Tofu Spinach Quiche

Delicious! I'm new to incorporating tofu into my diet (this is the first thing I've ever made with it), and I was so pleasantly suprised at how wonderful the taste and texture of this quiche is - at only about half the calories and far less cholesterol than the versions with eggs and cream. I used fresh spinach instead of frozen (I fried it in a little olive oil just until it shriveled so it would all fit in the pie crust), and I added a little ceyenne and extra garlic powder into the tofu and soy milk mixture. Additionally, since I'm not a vegetarian, I couldn't resist adding a little turkey bacon! OMG, that put it over the top! I fried up six slices (1 for each serving), diced them up, and stirred them into the final mixture. The turkey bacon only adds 10-15 calories per serving, and a ton of flavor. I'll definitely make this again!

Pineapple Pie III

Excellent! I made this for my parents on Memorial Day since my dad is a huge pineapple fan. It was great warmed up and topped with whipped cream. I later found out that it was nice and refreshing for a hot summer day when chilled in the fridge. I will definitely be making this one again for my husband!

Apple Butter Spice Cake

This cake had great flavor and would be a nice treat for brunch or dessert. The only change I made was to add small chunks of apples to the batter before baking. I found the topping to be a little dry so next time I may add something to moisten it.

Strawberry Spinach Salad I

This salad is the perfect mix of textures and was amazingly sweet, tangy, and savory. Changes I made to the original recipe included using balsamic vinegar instead of white, using red onion instead of white, and adding feta cheese crumbles. Also, it only needed about 2/3 the amount of dressing that the recipe makes. I will definitely be making this again for my husband!
