Baked Ziti IV

I made this with a single pound of ground pork sausage, ricotta cheese (in place of the cottage cheese and sour cream) and I ended up using an entire 3 lb jar of pasta sauce. This was phenomenol. Cheesy and gooey with just the right amount of sauce so that it wasn't dry. Was fairly easy to make as well, just a bit time consuming for my tastes, but I loved it, as did my whole family.

Tater Tot Casserole

I didn't use the ketchup, but I found the Worchestshire sauce to be a delicious addition to this. It really added to the flavor. My entire family gobbled it up. We always have leftovers, but not with this one. It was actually requested that I make a BIGGER pan of it next time. lol thank you!!

Shepherd's Pie VI

This was really yummy and it was a hit. Everybody loved it, there were NO leftovers, which is odd for our house! A plus is that it's super easy as well. I varied the recipe a bit. I added a bit of minced garlic as I was browning the meat and I used dried minced onion. I also agree that it was too bland. It needed more seasoning, more salt, to bring out the flavors more. Next time I make it I'm adding a bit of salt to the meat mixture.

Slow Cooker Chicken and Dumplings

I used cream of chicken with herbs soup and I took suggestions and used chicken stock in place of the water, I also added some chopped garlic and about a Tablespoon of Mrs. Dash seasoning. It was fabulous. My husband had thirds. Will definitely make this again.

Chicken Enchilada Casserole II

This was just delicious. My entire family loved this. It was so creamy and the flavor was fantastic but not over-bearing. Even my picky eater--who always has something to say about everything I cook--absolutely loved this. Will definitely make this again!

Thai Cashew Chicken

I have to agree that the flavor of the sauce was way too salty (I used low-sodium soy sauce), and had an almost overpowering flavor. I too ate each bite with a lot rice to compensate and was only about half full when I got tired of it. It had a good flavor my husband and I both really loved if only there was a way to thin it out a bit.

Creamy Banana Bread

Marie's Easy Slow Cooker Pot Roast

I took everywhere's suggestion and used a can of low-sodium beef broth in place of the water, and added some minced garlic. I also left out the celery and replaced the onion with dehydrated onion. The roast itself was so tender it fell apart, and everything had a wonderful flavor. Was the first roast I'd ever made, and it was a hit with the entire family. Not enough potatoes and carrots for my family, so next time will make more, but I definitely will be making this again. Oh, to thicken the sauce, I made a slurry of flour and water and added it the last half hour of cooking.

Baked Asian-Style Honey Chicken

I'm on a diet, so always looking for more flavorful and different ways to prepare chicken, so this one jumped out at me. I used chicken breasts, and substited Teriyaki sauce for the soy sauce; I also left out the green onions and the ginger ('cause my family doesn't like it), but this turned out very good. I took someone's suggestion and pan seared it, and yes, the sauce does stick to the pan something fierce, but it was very tasty. Only gave it four stars just because while it was good, it wasn't something that gave me that, "Oh my god this is heaven" feeling.

Broccoli With Lemon Almond Butter

I tried this recipe because I'm trying to eat healthier, but I hate the taste of broccoli. This did wonderfully for covering up that flavor, but like a few others have said, I found the lemon flavor a bit too much. The almonds, though, were a nice touch to what I see an otherwise boring veggie. I used frozen broccoli (steamed), but left out the lemon zest. I also took someone else's suggestion and toasted the almonds.

Best Ever Split Pea

This was so delicious! I rearranged stuff a bit, based on my tastes, such as--I used dried onion instead of fresh, left out the celery and the olive oil, only used 2 whole carrots, cut up, and I cut the chicken broth down to 4 cups. I also used "Emeril's Essence" for the "salt-free seasoning". But I grew up on a basic "water, peas and salt" soup, very blandish, and this turned out tasting better than even canned pea soup! My whole family loved it. This one's a keeper!!

Michelle's Peanut Butter Marbled Brownies

I over cooked my first batch (my oven tends to run too hot. So while I only baked them for 35 min, the knife came out clean. The middle wasn't still slightly gooey the way I'm used to), but these turned very good, the inside very moist and chewy depite. Also, since I read a few people say they were too greasy, I cut the butter back to 3/4 cup, which didn't seem to effect them at all. I also used milk chocolate chips. All in all, pretty good. I wasn't wowed by them, but will probably make them again. Next time I'll be sure to cut the cooking time back.

Banana Pancakes I

I was really surprised by the soft texture. In fact, I was sure I'd done something wrong! lol But they're soooo yummy. Tastes so much like eating banana bread that next time I'm going to try adding nuts next time. We always have extra bananas laying around, so I know I'll making these again.
