Fluffy Peanut Butter Frosting

Egg-Free Dairy-Free Nut-Free Cake

No More Crumbly Cakes for us!!!! My son is allergic to eggs and we have tried many, many egg replacements and egg-free recipes for cakes. All of the them came out crumbly (you had to freeze the cake to be able to ice it and then when you cut it,the cake feel apart). This recipe, i am happy to say, did not do that. It cut like a "normal" cake and tasted great too. The only change i made was using milk instead of water (since we dont have a milk allergy issue). It was wonderful in its texture and its flavor - we will be using this all the time!!

Pumpkin Flax Quickbread

Pretty good. I have been having a cravaing for pumpking bread for a while. I added raisins and this is really good and simple - great with a little natural peanut butter on top. The flax seed meal is a great egg replacement (my son is highly allergic to egg, so i wanted a recipe that i could make in our egg-free house) and i really liked it. I did drop the sugar to about 2/3 of a cup as suggested by some others - it was just right. Just a side note - i tried the version of this bread offered by KychynWych and it isnt a pumpkin bread at all - it is essentially a gingerbread - i ended up throwing the loaves out :( If you want a typical pumpkin bread, dont try that version.

Cranberry Apple Casserole

Really good! I was really wanting a fruit crisp or pie sort of thing - this was really easy to make and tasty. Like other reviewers, i think it is better at room temperature than hot, and i think it is better as a dessert than side dish. I added some walnuts to my serving and that totally ROCKED! The only think that i might change - i might use fresh apples and canned apples next time - it was a little sweet, but still really really good.

Simple Whole Wheat Bread

Absolutely wonderful!!! I am new at baking bread and this was great - i scaled the recipe to make two loaves, made one as is and the other into cinnamon-raisin and they both rocked!! The only change I made to the recipe is to substitute molasses for half of the honey. The only change i will probabl make in the future is to use half whole wheat and half white whole wheat. I want my kids eating whole grains rather than all white stuff (but half whole grain is better than none !) Thanks for the recipe !!! It will be my standard wheat recipe from now on!

Easy Focaccia

Awesome!!! This made a wonderful focaccia to go with our lasagna dinner and also made a great pizza crust!! I used my kitchen aid mixer to do the hard work - let the yeast bloom with water and sugar in bowl, add oil and then flour and salt, then knead with dough hook (the standard no fail - speed 2 for 2 minutes). It was really light and on the inside and crispy (but not hard) on the outside. The flavor was great too. I too had to had a bit more flour, but the dough was still a little stickier than others i have worked with. Added some garlic powder for flavor (since it was going with an italian dinner). Will be making again and again - my husband (the pizza man) claimed he would give up take out/delivery pizza for that crust. That in and of itself is a HUGE compliment.

Basic Flaky Pie Crust

I typically make horrible pie crusts - they dont brown, they are chewy and tasteles (rather than flaky)...this one turned out really well. The crust was flaky and yummy. I might make a 1 1/2 or even double recipe next time though - it only makes one bottom crust (as it indicated) and was kind of thin. Will definately use this as my pie crust recipe from now on.
