Easiest Eggplant

Very tasty & easy to prepare. Almost like having chips. I did half with panko and half with regular breadcrumbs, and I found I preferred the breadcrumb version.

A great base for veggie enchiladas. I added mushrooms & artichoke hearts to the filling, as well as some salt & pepper. Then I topped with green enchilada sauce mixed with a little sour cream (in lieu of the regular enchilada sauce).

Simple Hamburger Stroganoff

I love this dish. I add some chopped onion & minced garlic to the meat as it cooks & then when the meat is almost done, I put in fresh mushrooms. I only use 1 can of soup & about half the cream cheese & sour cream. Perfect!

Busy Night Turkey Taco Soup with Avocado Cream

This was great...way better than I expected since it was so easy! I used 1 lb ground turkey & browned it with spicy taco seasoning. Since I wasn't quite sure what "chili beans" were, I used pinto beans, and it's just divine.

Apple Scones

These tasted great. I mixed everything up in my standing mixer, which made it such that I didn't have to knead the dough. I formed 2 blobs of dough on my cookie sheet & then spread the milk & sugar on. Once I did that, I found it was easier to mold the dough & spread it out some. It wasn't as sticky once the milk was on it.

Creamy Macaroni and Cheese

Easy Chicken Rice Casserole

The flavor was good, but it wasn't as creamy as we wanted it to be. It was a pretty dry casserole, so if you're expecting the oozing & creamy casserole, this isn't it (at least not without some tweaking).

Chicken Spaghetti III

Oh so good! This is not prepared in the way that I am accustomed to for chicken spaghetti, but this was delicious. I used Mexican Velvetta cheese & added 1/2 can green chiles. A new favorite in my arsenal!

Absolutely Perfect Palak Paneer

Great results! I made this for my husband & sister-in-law who both love spinach to go along with the coconut chicken curry I was serving. The Palak Paneer received rave reviews from the eaters! Like previous reviewers suggested, I used 2 packages of frozen spinach (thawed & drained), queso fresco rather than ricotta & increased the amount of spices.
