Freezer Caramel Drizzle Pie

Scrumptious! When first glanced at recipe, I thought "caramel ice cream topping" referred to caramel ice cream for use as a topping. Thus, purchased ice cream and no caramel topping. Instead, used Dulce De Leche, which was lying around the house, and the results were fantastic! Since Dulce De Leche is thicker than caramel sauce, it did not drizzle evenly on each layer. Instead, we achieved a marble swirling effect, which was simply delicious! I wish I could give this recipe more than five stars!!

Eggplant Croquettes

Yum! I used 1 cup of onions and also added a diced red pepper. Used more bread crumbs than called for, and found only one egg was necessary. I followed other reviewers' suggestions and baked them in the oven. Delicious!

Apricot Tea Cookies

Delicious! This is my third time making these! The first two times I made them I used chopped apricots, but I took a short cut the third time and used apricot jam. I found the cookie to be a little bland the third time- I even added a little lime juice to the glaze mixture, but I think it still meeds more tang. Next time I will add lime juice to the apricot jam mixture as well.

Tiramisu Layer Cake

Simply put, this was incredible. It took me two tries to get it right- the first attempt at making two layers of cake crumbled into a cakey diasater, but it was worth the extra effort! I made it for a friend's birthday and she was delighted. I did double the coffee and kahlua, and the flavor was still quite subtle. Delicious!

Baingan Bharta (Eggplant Curry)

I could taste the potential in this dish, but alas, it was waaaaaaay too spicy! 1 whole jalapeno pepper was way too much for me, in spite of the many years I have spent acclimatizing to spicy cooking. Next time I will use only 1/4 of a jalapeno.
