Feta Chicken Salad

Reviewed: Dec. 8, 2009
This was easy to prepare and had a nice flavor. I followed the recipe exactly, except I used half of red pepper and a small white onion. I used my PC chopper on chicken and veggies. Served on butter croissants that were a little warm. Thank you for sharing this recipe.

Mulligatawny Soup I

Reviewed: Apr. 27, 2010
VERY GOOD! I made this soup because it has a fun name and thought my family would try it for that reason. We served 4 bowls out the "6 servings" amount and were all disappointed that there was not more. I would recommend at least doubling the recipe. The only changes I made were that I used brown rice, precooked my chicken before adding it to the soup and excluded the cream at the end. Definately a make again. Thanks for the recipe.

Black Bean Brownies

Reviewed: Feb. 3, 2010
These are fantastic!! I made the recipe as is, only adding 1 tsp baking powder. Puree well and you won't even tell they are beans. I've made several pans and they all disappear quickly. Try this recipe - it is VERY good and VERY easy.

Pork Tenderloin with Apples

Reviewed: Jan. 2, 2010
I made this for my family on January 1st, 2010 - this is what I did: I cooked my pork tenderloin in the crock pot, and the apples seperately in a pan. I doubled the recipe and used Fuji apples. This was AWESOME! Thank you for sharing this recipe, it is a definate make again.

Caramel Popcorn

Reviewed: Dec. 8, 2009
I have been making this recipe for a few years. Everyone LOVES it and it disappears quickly. I do not have much luck when I try to add nuts, they do not stick to the popcorn and just fall to the bottom. I use mircowave popcorn = 3 bags. Thank you for this recipe!

Apple Cinnamon Oatmeal Bread

Very good bread. I doubled the recipe to make 2 loaves. Smelled awesome while cooking and the family could not wait for it to cool off before eating it! Thanks for the recipe.

Zucchini Pineapple Bread I

Reviewed: Sep. 19, 2009
My bread was a bit dry, but it was my own fault. I tried to make it healthier by using applesauce for oil, decreased the sugar to 1 cup, and used 2 cups whole wheat flour/1 cup white. In an attempt to recover from the dryness I topped the bread with glaze/frosting made from leftover pineapple juice and powdered sugar. Will make again, thanks for the recipe.

California Bean Dip

Reviewed: Aug. 24, 2009
I have been making this recipe for a few years. I like to bring it to the "dish to pass" events, watch people overlook it and then once I talk someone into tasting it...it disappears and everyone wants the recipe. I confess, I call it the "Ugly Bean Dip" because it is not so attractive, but the taste - MMMM! I use plain can corn not the mexican, and be sure to make ahead of time to let the flavors come out. Be careful, it can get too soupy. Thank you for this recipe!

Easy Batter Fruit Cobbler

Reviewed: Aug. 24, 2009
Have made this twice, both times with blueberries, and doubled it (put it in a 9x13 glass dish). Served with vanilla ice cream. Recipe used as is except I added a few shakes of nutmeg and half wheat flour/half all purpose. I will save this recipe and definately use it over and over. Thank you!

Ginger Glazed Mahi Mahi

Reviewed: Aug. 24, 2009
My husband says "Yeah! Give that a 5!" Even the kids ate it up. We had frozen mahi mahi, thawed in the fridge covered with the marinade for a few hours then drained off the liquid. Cooked the fish on the charcoal grill and the sauce on the stovetop to reduce. Served with brown rice and steamed green beans. Excellent. Thank you for the recipe.

Apple Pumpkin Muffins

Reviewed: Dec. 20, 2011
YUM! I made the recipe as is, only subbing one cup of whole wheat flour as part of the 2.5 cups. I got 12 reg size and 24 mini muffins out of the recipe, but only had enough topping for the 12 larger muffins. I did add chopped nuts to the topping and a few sprinkles of nutmeg. Don't leave off the topping to save a few calories - it really makes the muffin. Thanks for sharing this recipe, it will be a "make again" here in my house.

Just got them out of the oven - SOOO GOOOD! I added 1 tsp vanilla and substituted dark chocolate bits for the nuts. Also added 1 Tbsp milled flax. Don't overbake as others mentioned. Great way to use old bananas - thanks for the recipe! This will be a definate make again.

Jumbo Breakfast Cookies

Reviewed: May 21, 2008
I made these for a brunch that included 8 moms and 19 kids -all I can say is that I came home without a crumb. I did save a few at home and my husband LOVED them!! I loved that I could make such a big cookie and the middle actually baked through. I have a few recommendations: I used rice crispies and chocolate chips, use 1/3 cup scoop (made 32 cookies), put them far apart on the baking sheet because they do spread and finally...let them cool on the tray for the full 5 minutes. As a cookie lover I was overcome by temptation and got a few off the sheet too soon and they fell apart. Be patient and wait it out :) Thanks for the recipe...I will definately be making again!

Awesome!! I halved this to make only 6 burgers and doubled the blue cheese. My husband said that this is the best burger I have ever made. Kids liked them too. Thanks for the recipe!

Banana Muffins II

Reviewed: May 5, 2008
My family loves these muffins! I make exactly as the recipe reads but add 1 tsp. cinnamon, 1/2 tsp vanilla and 1/2 tsp nutmeg and 1 Tbsp milled flax seed. The kids stand at the oven window waiting for them to bake - mini muffins disappear quickly. Thanks for the recipe!

Quick and Easy Refried Beans

Reviewed: Jun. 26, 2013
I followed the recipe exactly. I included the liquid from both cans of beans. The flavor was great. Only problem was that I did not mash up the beans all the way and my family thought they were a bit chunky. This recipe fed my family of 5 with one scoop for leftovers. Thanks for the recipe, definately a make again.

Apple Matzo Kugel

Reviewed: Mar. 26, 2013
I needed an ethnic recipe for my son to take to school in kid size portions. I used 1/2 cup melted butter in place of the oil. Otherwise I followed the recipe exactly, using Fuji apples. I filled cupcake papers about 3/4 way full and baked for 30 minutes until the apples were soft. I doubled the recipe and got 5 dozen cupcake portions. Thank you for the recipe!

Gelatin Spritz Cookies

Reviewed: Dec. 21, 2008
I was looking for a new recipe for my cookie press. This was perfect! I used a 3oz. Jello brand cherry and the color was great. I also used margarine, and reduced heat to 375 degrees for 8-9 minutes. They freeze really well. I froze 3 dozen and had another 2 dozen or so gobbled up as they came out of the oven. Thank you for the recipe. I can't wait to make other colors for other holidays.

Carol's Chicken Salad

Reviewed: May 4, 2010
I did modify the recipe but still gave it only a 4 because I felt the flavor of the mayo mixture was very strong. I only added half of the mixture and then straight mayo after that to get the creaminess I wanted. Now it is perfect. I omitted the water chestnuts and the cheese, used half of the recommended grapes and used white onion instead of green. Thank you for the recipe.

We had breakfast for supper and used this recipe. I was hoping to have leftovers to freeze...nope! The only thing I did different was add some extra vanilla. Thanks for the recipe :)
